An oreo stuffed in a cookie? That is probably the most genius idea ever.

It was so overwhelmingly delicious and rich that I actually couldn’t even finish a whole cookie by myself but the boyfriend had no problem gobbling these up like there was no tomorrow. I adapted the recipe a bit and used white chocolate chips instead because it gives off that milder chocolatey taste and I just didn’t want too much chocolate, especially with the addition of the Oreos. I especially enjoyed assembling the cookies with the Oreos because I felt like I was playing with play-doh!

Oreo Stuffed White Chocolate Chip Cookies (adapted from Picky Palate)

Yields 12 cookies

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup plus 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla
  • 1 cup white chocolate chips
  • 1 bag double stuff Oreo Cookies

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

Combine flour, baking soda and salt in a small bowl; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugars until smooth and creamy.

Beat in eggs and vanilla until well combined.

Gradually add flour mixture to the sugar mixture, beating just until incorporated.

Gently stir in white chocolate chips.

Using a cookie scoop, take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie.

Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough. Place onto prepared baking sheet.

Place into the oven and bake for 13 minutes, or until cookies are baked to your liking.

Remove from oven and cool on a wire rack. Serve with a tall glass of milk.
