Greetings from Seattle! I’ve had such a wonderful time here in this beautiful city, soaking up so much culture, meeting great people and spending time with great friends. But before I attempt to catch a few hours of shut-eye to catch my early morning flight back to San Francisco, I just had to share this epic chili.

It takes just five ingredients and it comes together in fifteen minutes. Really, all you need is chicken broth, chicken, beans, salsa verde and cumin. That’s it! From there, you can add some fun toppings like fresh avocado and sour cream but either way, you’ll be so cozy with a piping hot, steaming bowl of this chili. You’ll also be able to feed an army with this so you’ll be well fed for a couple of nights!

Hi! I’m from Mexico City. First of all, you should know, I just love your blog! It’s amazing how you make things see easier to do than (sometimes) they really are (: So, I was wondering if you could upload more images about the process of the food you prepared please! I think it would be easier for us when we are going to start making it. It’s just an opinion that would be awesome to me, cause much of the ingredients you mention, here in Mexico are difficult to get them in the supermarkets cause they just don’t know them.
    Thank you! And please never stop cooking! (;

5 ingredients? Oh, I am SO sold. I love white chicken chili but it seems like every recipe has like 30 ingredients. This is perfect! Glad you enjoyed Seattle… I moved away from there 3 months ago to an internship in Arizona and miss Seattle like crazy! :) Beautiful photos of this, by the way!

It’s been raining here since Saturday and they say starting tomorrow the temperatures will drop below freezing point. A big bowl of hot soup is my go-to meal until the weather warms up a little.
Thanks for sharing and for helping me out with the #chocolateparty

I made this the other night and it was one of the best things I have ever ate.. My young kids even loved it! I made it using Hatch salsa verde sauce (green). I will say that adding cut up avocado, a handful of chedder cheese and sour cream to the top made all of the difference. We appreciate you so much! xoxo

  5. Tania S. says

I loved it! Made it for dinner and my family raved! Even my 6 year old that won’t eat anything that isn’t from a fast food restaurant loved it!!! Thank you for bringing my family together!!!

  6. Allison says

I found this recipe on Pinterest and since it’s a 5 ingredient recipe, I actually made it instead of just pinning it. But it was so good that I wanted to thank you so much for taking the time to share your pictures and recipe. I have shared this with my friends and coworkers, I thought it was so good! Thank you!

Found this on Pinterest and I’m making it tonight! Perfect day for it – sunny yet 50 degrees outside. My boyfriend is really excited. Thanks so much!!!

  8. Melissa says

Made this tonight and LOVED it!! My hubby did too. Perfect for a chilly fall day in Minnesota. Thank you for a simple, crowd-pleasing recipe. In addition to your suggested toppings (which were all amazing), I also added a squeeze of fresh lime. Delish!! Thanks again :)

  9. Bonnie says

Thanks for this! Made it for my roommates tonight, and we all LOVED it!! Added a little garlic and onion in case anyone wants a little more. You are brilliant!

  10. Mike D. says

WOW!! So easy, and SO SO GOOD! I bought a rotisserie chicken from the store and shredded it. This was a fantastic meal. Everyone in my family really enjoyed it. My overly picky nine year old gave it a thumbs up, and said it was extremely awesome. This will be a do over for SURE!

I have never tried white chicken chili. My husband and I are having a cook-off to see who cooks the best. I was going to cook regular chili, but I thought about doing something different with the chili. This sounds great and easy!

  12. MomOfFour says

Help – I made this but used 8 cups of chicken broth (2 containers) Now it is too soupy, more like mexican chicken soup. I tired adding some cornstarch to thicken it – any suggestions?

    • Chung-Ah says

Is there a reason why so much chicken broth was used? The recipe calls for 6 cups. Also, this soup is not meant to be thick.

  13. Kelly says

Another winner! It’s Kelly again. I tried your quinoa chili and it was so good, I thought I’d try another one of your recipes. This one is unbelievably easy and fast to make, and really has a great flavor. Thanks again! You rock!

    • Chung-Ah says

I’m so glad you tried out both recipes! This particular recipe is one of my favorites because it really is so easy!

  14. Colleen says

Made this the other night, it was phenomenal! The chili is so good and the avocado, tortilla chips, sour cream and cheese are the perfect toppings. So fast and easy to make, I’ve shared it with several friends. I plan on making it again very soon. Thank you for posting!

  15. says

Great recipe and very light as well, thank you for sharing! I have a question though, do you drain the beans before putting them in or do you put them in with the juice so it can thicken a little bit?

  16. Jennifer says

Hi! I love easy recipes. What kind of chicken works best? If I’m lazy, is cut up rotisserie ok to use? And what kind of salsa verde? I’ve never used it before. Thanks!

    • Chung-Ah says

You can certainly use rotisserie chicken. As for salsa verde, I use the brand from Trader Joe’s but any brand will work just fine in this recipe.

  17. Allison says

Wow! Just made this with Trade Joe’s frozen chicken and chicken broth, salsa verde, and northern beans from Kroger and TJ. I added Publix mexican cheese and sour cream with a crumbled up tortilla chip. Best soup ever! So glad I found this!

    • Chung-Ah says

Salsa verde is also known as “green sauce”, which consists of pureed cooked or raw tomatillos, jalapenos or other chili peppers, white onion, cilantro, and lime.

  18. Susan Keller says

Just made this tonight and loved it! I actually prepared it two days ago and then put in fridge for tonight’s dinner. Family loved it too! I have to tell you I am fairly new to your site, but have made at least 10 recipes and we have loved every single one. Thank you for making delicious food so easy to prepare. My husband has commented on several tasting restaurant quality (you are making me look like a trained chef!!). Keep em coming!

  19. Lauren says

This looks so amazing, but I don’t care for beans. Do you think this recipe would work if I left out the beans??

    • Chungah says

Lauren, as this recipe has only five ingredients and requires 2 cans of beans, I do not recommend omitting it entirely. If you are not a fan of beans, this recipe may just not be for you.

  20. Kathleen says

As the temps are dropping in So Cal….I have to come to my “Go-To” site and tonight’s dinner is this White Chicken Chili!! I’ve made this several times and it’s my husbands favorite!
We’ve made so many of these recipes and it’s been my go to site for many special occasions or when I’m in need of a quick, yet tasty (act like I’ve slaved all day) meal.
Thanks for sharing your love with us!!
It’s been a while Chung-Ah, but how’s your Corgi doing?
Fellow Corgi and Damn Delicious lover!

He is so adorable!!! OMGosh, that FACE!!! May I share one of your/his photos on my FB page?…with credit to you and your site, of course. (The one where you went to the bathroom and he took your spot in bed. Lol)
Loved seeing your sweet Butters!!! Thanks for sharing him with us!! :)

  21. Karen says

Made this and it was so easy and delicious. My husband said I knocked it out of the park with this one. Great recipe. Will be making it again. Thanks!

  22. Charlotte says

Made this tonight for dinner! Oh em gee! I LOVED it!!! I’ve already shared with family, friends, and coworkers. So delicious! Thanks for sharing the recipe!! :)

Hey it’s a elegiac here ! Love this post. Fed it to my monkey sister she went ape ! Hahah. I’m creative. Sure do love how you added the verde instead of a natural red salsa. VERDE DAY ! Love you.

  24. Marsha Gibbons says

Good, but very salty. Use low sodium chicken broth and try to find green chili salsa that is low in sodium.
