Coconut Chicken Tenders
Crisp, crunchy chicken tenders that are sure to be a hit for everyone in the family. So quick, simple and easy – perfect for those busy weeknights!
Let me just start by saying that these are definitely not like your childhood chicken fingers. Nope. They’re a million times better, smothered in that sweet coconut goodness, giving you that tropical flare in these amazingly crisp-crunchy chicken tenders.
And these babies are impossibly easy to make using pantry ingredients that you already have on hand. Not only that – both kids and grown-ups will be dying to get their hands on these!
Best of all, when you’re ready to serve, you can dip these in your favorite dipping sauces – ketchup, ranch, BBQ sauce, buffalo sauce, sweet Thai chili sauce, etc. – the sky is the limit! Although we used a sampling of all sauces and loved them all!

Coconut Chicken Tenders
Ingredients
- 1 cup vegetable oil
- 2 pounds boneless, skinless chicken breasts, cut into strips
- Kosher salt and freshly ground black pepper, to taste
- 2 large eggs
- 1 teaspoon soy sauce
- 1 teaspoon Sriracha, optional
- ½ teaspoon garlic powder
- ¼ teaspoon ground ginger
- 1 ½ cups Original Bisquick™ mix
- 1 cup shredded sweetened coconut
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat vegetable oil in a large skillet over medium high heat.
- Season chicken with salt and pepper, to taste. In a large bowl, whisk together eggs, soy sauce, Sriracha, garlic powder, ginger and 2 tablespoons water.
- In another large bowl, combine Bisquick mix and coconut.
- Working one at a time, dip chicken into egg mixture, then dredge in Bisquick mixture, pressing to coat.
- Working in batches, add chicken to the skillet, 3 or 4 at a time, and cook until evenly golden and crispy, about 3-4 minutes on each side. Transfer to a paper towel-lined plate.
- Serve immediately, garnished with cilantro, if desired.

Just wondering on your recipes that you fry with oil if you can use an air fryer with a similar outcome?
To be honest, I have never actually used an air fryer before so I cannot really say with certainty. As always, please use your best judgment when making substitutions and modifications.
Just made these. Tasted good. No Bisquick so used a simple substitute of flour, baking powder, salt and vegetable oil. I felt like though there was a lot of wasted coconut mixture. Half the amount would have been fine.
Do theses freeze well?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
Can i use dessicated coconut instead?
Yes, absolutely.

Can you bake instead of fry
Yes, Karen, these can be baked but you may have to adjust cooking time as needed.
I had another recipe for these but did not make often because very complicated. Your recipe was so simple and quick 🙂 Served with an orange marmalade sauce. Kid approved.

Annie, unfortunately, without further recipe testing, I cannot advise an appropriate oven-method at this time. Also, I know there’s a bit of oil here but this is really best when fried!

Susanna, I do not recommend simply swapping out the Bisquick for all-purpose flour. However, if you do not want to use Bisquick, it may be best to do a flour-egg-Panko breading instead.

I have a whole bag of unsweetened coconut flakes that I need to use. Can I use those and then add some honey or sugar or agave or something to sweeten the recipe up?
You can certainly try substituting unsweetened coconut flake with the addition of a sweetener but without further recipe testing, I cannot speak for how much this will change the overall taste/texture of the dish. It is always best to use the ingredients listed in the recipe to obtain the best results possible.
Don’t use unsweetened coconut flake even with adding honey to the egg mixture and because i didn’t have Bisquick on hand I tried using pancake mixture i was soooooo disappointed as I was really looking forward to this dish. Will defiantly try again with the recipes ingredients next time.

I’m always looking for new, creative ways to prepare chicken and this recipe looks great! I was JUST talking to a coworker yesterday about how amazing Bisquick is, especially if you’re in a bind and have to pull something together at the last minute.

I live outside the US so we can’t even get Bisquick at all…if you find a good substitute, Edna, please let me know. I looked up a “homemade Bisquick” recipe too but they call for vegetable shortening, which I can’t get here either.
