Double Chocolate Chip Zucchini Muffins
Quick, easy, AND healthy, loaded up with a double-dose of chocolate heaven. Perfect way to use up your zucchini! 195.1 calories.
I have never really been a fan of chocolate – chocolate bars, hot chocolate, chocolate ice cream, chocolate dipped strawberries, etc. – I know, it’s crazy. But these just never hit the spot for me. But when you throw it into a moist muffin with melted chocolate chips and freshly grated zucchini, I’ll inhale it in the blink of an eye.
I don’t know what it is. Maybe it’s because I’m a carb junky. Or maybe it’s the zucchini, the zucchini that you can’t even taste but still get all of the health benefits from in chocolate form.
Now this isn’t your egg-free, oil-free, flour-free type healthy muffins. It has eggs, it has oil (or applesauce if you prefer) and just 2 tablespoons of butter. I say that if you are going to do something, you have to do it right, and butter is always needed, even if it’s just a small amount.
Still, this is the perfect excuse to have a healthy breakfast on-the-go – not to mention, you’re devouring chocolate guilt-free in the AM. You can’t top that!
Double Chocolate Chip Zucchini Muffins
Ingredients
- 1 cup all-purpose flour
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ⅔ cup sugar
- ¼ cup vegetable oil*
- ¼ cup plain Greek yogurt
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside.
- In a large bowl, combine flour, cocoa powder, baking powder, cinnamon and salt.
- In a large glass measuring cup or another bowl, whisk together sugar, vegetable oil, Greek yogurt, eggs, butter and vanilla.
- Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Stir in zucchini and chocolate chips.
- Scoop the batter evenly into the muffin tray. Place into oven and bake for 20-22 minutes, or until a tester inserted in the center comes out clean.
- Remove from oven and cool on a wire rack.

Absolutely delicious. You had me at double chocolate and adding zucchini upped the wow factor! Excellent as written, adding a teaspoon of espresso powder the second time I made them resulted in an even deeper flavor profile. Every damndelicious recipe I’ve tried has been a winner. This is no exception!

As for storing, line the bottom of an airtight container with paper towels. Line up your muffins and then top with another layer of paper towels before sealing with the lid. The paper towels will absorb the extra moisture, and your muffins will retain most of their texture and flavor. Hope that helps!

Can I substitute applesauce for sugar? If so, would I need to use less of an ingredient?

I’m so excited after 3 attempts these muffins have come out perfectly! The first two attempts were completely user error, one was difference in stove temp and the other was my lack of properly measuring a couple ingredients. ( I don’t do much baking because you have to be precise and that doesn’t fit my cooking style lol). I followed the measurements exactly with the exception of yogurt as I didn’t have any, so I subbed in a few spoonfuls of sour cream and they came out delicious!!! Thanks for the awesome recipe!
Love these muffins! I double the recipe but instead of doubling the Greek yoghurt I add an avocado. My kids love these and I get to add another green vegetable to it which my daughter would normally refuse to eat.

I just made these today, and they are amazing. If the recipe name didn’t say zucchini, you would never even know it was there. So yummy!!
I made them today but they took forever to bake. They were wet inside at the end of 25 minutes. I squeased all the liquid out of the zucchini before adding it. I will say they are very good. Any suggestions on the baking?
Perhaps your oven temperature is not calibrated? I find that it is best to use an in-oven thermometer to tell you what’s really going on inside your oven.
So I took your suggestion and bought an oven thermometer. My oven is running 25 degrees below. Thanks for the great advice. I will adjust it for my recipes.
BTW the muffins are the best. I can’t wait to make them again when the zucchini starts showing up on my doorstep!
