Ham and Cheese Hashbrown Waffles

Crunchy, yet silky smooth hashbrowns made right in the waffle iron. So quick, so easy, and just so darn good!
I recently invested in a waffle iron. And I’ve been bad. Really, really, really bad.
I waffle-ized hashbrowns. Except I added cheese and ham, making these to be pretty much the best kind of waffles of all time.
They crisp up just perfectly in the iron, while completely melting in your mouth with every single bite.
And with the addition of the ham, this can easily be served for dinner with a fried egg on top.

Ham and Cheese Hashbrown Waffles
Ingredients
- 1 20-ounce package refrigerated hash brown potatoes
- 8 ounces black forest ham, diced
- 1 ½ cups shredded cheddar cheese
- 3 large eggs, beaten
- 2 cloves garlic minced
- 2 tablespoons chopped fresh parsley leaves
- ½ teaspoon dried thyme
- ¼ teaspoon smoked paprika
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- In a large bowl, combine hash brown potatoes, ham, cheese, eggs, garlic, parsley, thyme and paprika; season with salt and pepper, to taste.
- Pour a scant 1/2 cup of the potato mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes.
- Serve immediately.

These were great!! I used crumbled cooked bacon instead of ham. Mine made 4 full waffles – like the idea of others of adding a couple more eggs maybe…??
Two things I would suggest for people with problems with sticking to waffle maker:
1. My waffle maker directions specifically say to NOT use cooking spray – it has something in it that can gum up the waffle maker – I used a silicone basting brush and avocado oil to coat mine
2. I drizzled some olive oil into my egg/cheese/hash brown mixture and stirred it around – no problems!
Just got a Dash four round waffle maker for Christmas and I love it. Looked up recipes for a waffle maker and saw this. I used 4 medium Idaho potatoes because that’s what I had. I added 1/8 tsp of cayenne pepper along with 1/4 tsp each of onion,garlic powder and parsley flakes. I cooked for 10 minutes and they came out perfect.
I just finished making these and they are absolutely delicious….came out so crispy and the flavor can’t be beat! I am so glad I tried this recipe and I am sharing with friends. I don’t have a regular waffle iron, mine has 5 hearts that are joined to make a circle, recommend using a regular one as the hearts left places where it was hard to lift the waffle from the iron. None of the stores I went to had the hash browns to I bought regular potatoes and made my own……I highly recommend this recipe, you won’t be disappointed!!!
Amazing recipe!!! The whole family enjoys this for breakfast (including one super picky toddler). I’ve also made it with crumbled bacon. Its like a big breakfast all combined into a beautifully cheesy and crispy waffle. So happy I found this

I’m going to be trying this in the very near future. Love the “meal in one” concept. Perhaps adding a couple TBSP melted butter to recipe would help all those who had trouble with hash browns sticking to waffle iron plates??

I loved these. What a fun brunch recipe. I used garlic powder and real bacon bits. I sprayed my Belgian waffle maker and they tipped right out. I did lift up the waffler to tip. Mine made 4 so I don’t know if it was because of the Belgian maker or bacon bits instead of ham. I was skeptical of the syrup but you were right, it was delicious. I will make these often. I used Simply Potatoes and it was so easy to make. Thank you for the recipe.

These turned out exactly like the picture, with flavor to match! Absolutely delicious! I used fresh potatoes since I didn’t have pre-shredded on hand; 20 oz ended up being about 4 medium russets, peeled, grated on a box grater, and wrung in a towel to remove excess moisture. I added a pinch of red pepper flakes. I also didn’t need to grease my waffle iron–my hash browns peeled right out. I don’t usually have to grease it for waffles either so maybe I just have a magical iron, but part of me wonders if the sticking some people are experiencing is because their “batter” is going in cold? Mine was essentially room temp since I didn’t use refrigerated potatoes. Just a thought!

Not sure where I heard about hash brown waffles but wanted to give it a try. Googled for a general recipe and came across yours. Fantastic! I made the following changes: 1) handful of packaged crumbled bacon instead of ham (what I had on hand), granulated garlic instead of fresh (for even distribution of flavor), addition of granulated onion and elimination of paprika, thyme and parsley (personal tastes and didn’t have fresh parsley). My waffle iron is the round Belgium-style kind and is either so old or so cheap that the heat can’t be adjusted lol. If it’s plugged in, it’s on! After it was preheated, I sprayed top and bottom well with nonstick spray (and again between every waffle). Spread a thick uniform layer of mixture all around the iron (it won’t spread like regular batter). Closed it and pressed tightly. Checked on it every couple minutes and removed when most of it was well-browned. Topped with sunny-side-up eggs. It was so good my younger kids cried about how much they hated it (seriously, this means it was a great dish by adult standards). Older teenager who finally appreciates good food asked for seconds.
Tips to avoid sticking: Spray the ish out of that iron in between each batch. Make sure you’re using the correct measurements of ingredients (20 ounce package of refrigerated shredded potatoes, 3 large eggs, 1.5 cups shredded cheese). If you’re using frozen/freshly shredded potatoes or medium/extra-large eggs, etc., the results may be different! Also check to make sure your iron’s cooking surface isn’t worn down or scratched.
And if it helps, the shredded potatoes I’ve found have been with the prepared, packaged foods (like microwaveable mashed potatoes). In my store that is near the fresh meats.
This was really good! I used garlic powder and shredded a fresh potato. Also used dried parsley and forgot to add the cheese to the mixture, but added it on top after they were done and it looked like icing! They were so good, thank you so much.
I just made these and used the dehydrated Hungry Jack hashbrowns. They turned out DELISH. Followed the directions on the hasbrowns for their prep then let them cool. I used 6 eggs (0 pts on WW) to stretch the ingredients. Turned out fluffy and delicious. Thanks for the recipe.
I have a ham and cheese waffle recipe but I like yours with the addition of hash browns. Do you top with maple syrup?

I tried this today. Wow. easy. My favorite thing… (easy that is).. I had to add 3 more eggs though to keep the waffles together… the first one fell apart. Could have been due to my waffle maker though… It’s one of those ones that you flip over… definitely Belgium waffle size. All in all, great recipe!

I just bought a Belgian Waffle Maker and was ready to dump the one I have that looks just like what you have, but if I can use it to make great hash browns, I’m keeping it. I can’t wait to give this a try. Wish me luck and I will spray with non-stick spray.
well, I don’t know where these have been all my life but they are delectable. Spray your waffle iron after each waffle and they will not stick. A poached egg over each waffle will make them company special .
Stuck terribly to my waffle maker. So switched to pancake format with fried egg on top. Tasted good.

Mine also did not turn out. I too had to scrape them off the waffle maker. Was not a happy camper. Followed directions. Used the frozen hash browns (thawed) Would like to try again using refrigerated has browns.

I live on a small island in a strange country, and it is not possible to buy hashbrowns here, nor nonstick spray, lol. My question is; When I make the hashbrowns myself, should they be cooked before they go in the iron?

Didn’t work out for me at all! Greased the waffle iron, followed recipe to the t and had to scare them out of the waffle maker each time Delicious but not waffles the way pictured! After three fails (played with making smaller/bigger to see if helps).. just tosses in a pan: of course not the same. Is it my waffle maker? What’s wrong?

I made half without cheese because of a picky eater in my house. They turned out amazing! I added bacon along with the ham. Only prob was no matter how much non stick spray I used they still stuck. But my family didn’t care. Lol. They were still delicious waffle shape or not!
Could this be made in the oven?

So so so so good! I made these for brunch-for-dinner last night and they were a huge hit. I used chopped fresh herbs that I had on hand.. I also mixed the eggs, hashbrowns and seasonings first, then divided the mixture in half. In one bowl I did chopped ham and cheddar and the other I did crumbled blue cheese and chopped cooked bacon.. I served them with a dollop of Greek yogurt (which we use instead of sour cream) and topped with fried eggs. We ate until we exploded, picked up the pieces of our bodies and had seconds. THANK YOU!!

Okay, didn’t work in my waffle maker. But mine makes smallish heart shaped waffles. So I pulled out a pan and friend them up in little round cakes and they were delicious! I used a ham steak and the eggs I had just gotten from my CSA and had some sour cream with chives on the side. Making again soon!

This does not work in a waffle iron I ended doing the rest of it in my cast iron skillet. It was tasty but not super crispy.

When you say 1/2 cup of potato mixture in the waffle iron, do you mean 1/2 cup total with 1/4 cup on each side (if using an iron like the one in your pictures). Or do you mean 1/2 cup on each grate (again if using an iron like the one pictured)

I got a new waffle maker today and had to try these! I didn’t have any refrigerated or frozen hash browns, but I did have some dehydrated ones. I covered them with boiling water for 3 minutes ( I believe I used about 5 ounces), drained them, and followed the instructions exactly. DELICIOUS!!! I had a bit of trouble with sticking, but I worked it out and everyone enjoyed them. The fried egg is a MUST!! Thanks for a great recipe!
Tried these for brunch today and they didn’t work for me 🙁 I greased my iron, followed all directions and they stuck and never browned. My husband ended up tossing them in the oven on a pan just to crisp, but the flavor wasn’t our favorite either. Your photos made my mouth water though and I have other recipes of yours that I’ll make regularly. Thanks for the work you put into these!
I made these today, as the picture was making me really hungry and could not wait for a waffle iron. I decided to try them with the toasted sandwich maker. It worked, although slightly thicker in texture. I did use partly nuked potatoes I already had in the fridge that I grated.

I like it better without the thyme (not a fan) and a little less ham. I’ve also made it with bacon and chives. Yum yum yum. I can’t thank you enough.

I used freezer hash browns and defrosted them. I then put them in paper towels and sneezed all the water out…similar to what you would do with frozen spinach.
It worked fine.
But… I thought these were bland.
Missing something. I am going try cooked bacon in place of game and chives in place of thyme. I may add some spice too.
Overall a great idea and a good base but I think experimenting will improve this one.
These were the BEST WAFFLES. EVER. My family loved them and we might have fought over who got the last one. I did have trouble getting out of the waffle iron after the first two, even though I greased it well. Though no one seemed to mind that it didn’t look perfect. Thank you for another great recipe!
Is it possible to make these without the eggs? I have two egg haters so am wondering about something else to “bind” this, 1/2 and 1/2 perhaps?
Unfortunately, without further recipe testing, I cannot advise an appropriate substitute that will not alter the overall taste/texture of the dish. Using a substitution may also result in a mediocre outcome but if substitutions must be made, please use your best judgment.
These are amazing hash browns! I have already made these twice and love them. I also HATE eggs… Refuse to eat them. They really are needed in this recipe. Once made, you cannot taste or locate any egg flavor at all, it is merely a binder. Trust me, they are awesome!

I’m not sure if this helps, but at my grocery, the refrigerated hashbrowns are sold by the eggs and cartons of egg whites. You might want to check there at your store. It took me awhile to find them.
Ore-Ida makes refrigerated shredded hash browns. Ask at your regular grocery store.
We just used frozen hashbrowns and the results were phenomenal! I just let them thaw a bit before mixing in the other ingredients.
I did too. Except I put the eggs in before I realized they weren’t thawed enough. The yolks froze in chunks to some of the potatoes. So, thaw for a consistent mixture!

I made this Patoto ham and cheese waffle this morning, WOW! I used pepperjack cheese in place of cheddar. It was SOOOOO good and the part I think will work thou I haven’t done it yet is to freeze or just put leftovers in the toaster for a quick breakfast. Yes, absolutely! You can freeze in individual portions and reheat as needed. Hope that helps!
I have a Belgian waffle iron, much deeper than the one shown in your picture. What adjustments do I need to make?
You can add more of the potato mixture into the iron as needed. Cooking time may also have to be adjusted.

These look so good! Just a question from someone who lives in an area that doesn’t sell packaged refrigerated hash brown potatoes – can I just use grated / shredded potatoes? Will this affect the cooking time? I’ve never seen packaged refrigerated hash brown potatoes and can only assume that they may have had some pre-cooking prior to being packaged. Thanks!
Yes, you can certainly use grated potatoes instead. Cooking time should remain the same but as always, please use your best judgment.
You need to squeeze some of the water out of the shredded potatoes.
