The most unbelievably easiest quesadillas ever with just 3 stinking ingredients. That’s it! And they’re so tiny and cute!
Behold the world’s cutest handheld quesadillas that only require 3 ingredients.
But don’t worry. Their cuteness hasn’t stopped me from inhaling these at lightening speed.
Actually, because they’re smaller, I think you’re more prone to eat more. Or that’s what I keep telling myself.
Plus, the wonton wrappers are somewhat thinner than tortillas so again, you will definitely consume more here.
See, now I just verified that twice.

Mini Bean and Cheese Quesadillas
Ingredients
- 24 wonton wrappers
- 1 16-ounce can refried beans
- 1 ½ cups mozzarella cheese
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Place wrappers on a work surface. With a butter knife, spread 1 tablespoon refried beans over half of each wrapper. Top with 1 tablespoon cheese. Fold the dough over the filling to create a half-moon shape; do not seal.
- Heat olive oil in a large skillet over medium heat. Add quesadillas in a single layer and cook until the cheese has melted, about 2 minutes per side.
- Serve immediately, garnished with cilantro, if desired.

O, M, G, these are so good. I LOVED these. They are nice and crispy, and turned out so, so well. I made these with the Creamy Chorizo Dip and my fiancee used these as dippers instead of the chips. We …inhaled these. I didn’t use mozzarella, but substituted some shredded cheddar cheese just because I had it on hand. You could probably entirely make these however you wanted them. I am so happy I made these. If you are thinking of trying them, do it. Thanks for this one!

My mom has actually been making these for 20 plus years, only with corn tortillas instead of wanton wraps. But I’d like to try them with wanton wraps yet
Man, these were fantastic! They looked a little funky because the wonton wrapper sold at our store are square, so they didn’t make half-moons, but it didn’t impact the flavor at all. Definitely let them get brown–we were afraid of burning them and some didn’t get as crispy as I’d like. But still good!
We’re already planning on some variations, such as mixing in some cooked chorizo with the beans and switching to pepper jack cheese.
Can you let us know the brand of wontons you used for this recipe, or maybe update the post with a pic of what the wonton should look like before its fried so that we know we have the right kind? Thanks!! I can’t wait to try this recipe, I’m sure it will be a staple in our home 🙂

I make several things with wonton wrappers and I do freeze them. I put them on defrost in the microwave then heat them in the oven. I like making buffalo chicken dip and putting that in wonton wrappers. Yummy!!! But if you try making them, make the dip the day before and put in the frig. It makes it easier to put on the wrappers. Worth making!!!

Can these be frozen?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
My husband doesn’t like refrained beans…..ugh! Can you suggest a substitute please?

The ingredients list parsley, but the directions list cilantro. I’m thinking parsley is correct? Where do I find wonton wrappers? This recipe sounds fun and yummy. I think my husband would chow down.
You can use parsley or cilantro. Wonton wrappers are sold in most grocery stores, located in the refrigerated aisle.
