Berry Crostini with Whipped Goat Cheese
Patriotic berry crostini with an incredibly creamy goat cheese spread. And you wonโt believe how easy this is to make!

With July 4th right around the corner, Iโm in desperate need of quick and easy dishes, preferably ones that donโt involve any cooking time. So wIth that said, Iโve prepared you with a quite fantastic, yet so incredibly easy, berry crostini.
Hereโs how it comes together:
You start off with a simple goat cheese mixture, whipped with a bit of heavy cream, confectionersโ sugar and vanilla extract. If you really want to go all out, Iโd even throw in some vanilla bean seeds. So while you slather that on some toasted bread, make sure toย macerateย some strawberries and blueberries with a bit of lemon juice and sugar. This will let the berries marinate and caramelize in its own juices, leaving you with some gorgeous, sugar-glazed berries. When all is done, go ahead and layer those berries on top of the goat cheese and serve.ย Now how easy was that?
The presentation is gorgeous and like I said, it takes so little to throw these together. Theyโre perfect as an appetizer, as a dessert or even a snack. Either way,ย youโll be grabbing a handful of these bites before you know it!

Berry Crostini with Whipped Goat Cheese
Ingredients
- ยฝ cup strawberries, thinly sliced
- ยผ cup blueberries
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon sugar
- 1 baguette, thinly sliced, toasted
- 2 tablespoons olive oil
- ยฝ cup crumbled goat cheese
- 2 tablespoons heavy cream
- 1 tablespoon confectionersโ sugar
- ยผ teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a small bowl, combine strawberries, blueberries, lemon juice and sugar; set aside.
- Place baguette slices onto prepared baking sheet; drizzle with olive oil. Place into oven and bake for 8-10 minutes, or until golden brown.
- In a medium bowl, whisk together goat cheese, heavy cream, confectionersโ sugar and vanilla until smooth.
- Spread goat cheese mixture on each baguette slice and top with 3 slices strawberries and 1 blueberry.
- Serve immediately.
