Spam Fried Rice
A quick and easy dish that can be made with any meat or veggies that you have on hand. It’s the perfect clean-out-the-fridge meal!
I love to cook Asian-inspired dishes so a rice cooker is much needed in our household. But for the last two years, we’ve actually been without a rice cooker and it’s been driving me crazy. I just didn’t have the time to shop around for a rice cooker so for the time being, we resorted to cooking basmati rice on the stovetop, but it just wasn’t the same as using a rice cooker. That’s why I was incredibly thrilled when Zojirushi asked me to review their Micom Rice Cooker & Warmer NL-AAC10/18.
The minute I received the Micon, I was in heaven. With 7 different settings (white/sushi, mixed, porridge, sweet, brown, steam and quick cooking), a steaming basket, and a “keep warm” function, it’s no surprise as to how the micon cooks such perfectly fluffy and tender rice every time. Plus, the cute melody that the rice cooker plays each time the rice is ready always puts a huge smile on my face.
So with a full pot of perfectly cooked white rice, I couldn’t help but make some fried rice. I’ve made pancetta fried rice and quinoa fried rice so I went a different route using Spam. I know that some people have HUGE aversions to canned meat but Spam was a major staple in our household growing up and it was such a delight when my mom would break open a can of Spam. Plus, with a drizzle of Sriracha, this Spam fried rice quickly became a childhood favorite!
Spam Fried Rice
Ingredients
- 2 tablespoons vegetable oil, divided
- 2 large eggs, beaten
- 2 cloves garlic, minced
- 6 ounces Spam, diced
- ½ cup frozen corn
- ½ cup frozen peas
- ½ cup frozen diced carrots
- 3 cups cooked rice
- 1 ½ tablespoons soy sauce
- ½ tablespoon fish sauce
- ¼ teaspoon sesame oil
- ¼ teaspoon white pepper
- 2 green onions, sliced
- Sriracha, for serving
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet over low heat. Add eggs and cook until cooked through, about 2-3 minutes per side, flipping only once. Let cool before dicing into small pieces.
- Heat remaining 1 tablespoon vegetable oil in the skillet over medium high heat. Add garlic and Spam, and cook, stirring often, until light golden brown, about 3-4 minutes.
- Add corn, peas and carrots. Cook, stirring constantly, until vegetables are tender, about 1-2 minutes.
- Add rice and gently toss to combine.
- Add soy sauce, fish sauce, sesame oil and white pepper. Cook, stirring constantly, until heated through, about 1-2 minutes.
- Stir in green onions and eggs.
- Serve immediately, drizzled with Sriracha, if desired.

This is a wonderful recipe! My only comment is you do not need to make 3 cups of rice. It is way to much rice and you only need to make about 1 cup. I also did not add the fish sauce or the Sriracha.
I believe the 3 cups rice is COOKED. one cup uncooked yields about 3 cups cooked.

We love so many recipes on this site, but this may be our current favorite. The whole family loves it! We do a double batch so we can enjoy the leftovers, and even working with such a big quantity, it is insanely easy to make. (We use our wok instead of a skillet to fit all the ingredients in.) Awesome.

What kind of rice do you use for this recipe? I’m not sure if basmati is best for fried rice. Thank you.
I have used basmati rice in fried rice before and loved it! But you can always use a rice of your choice to suit your personal preferences.
I actually made this, double the amounts. Kept the onions out. Which makes it also a great dish to share with my dogs. They normally just get rice and chicken with some veggies in it. I figured since I was making it, I’d make enough to share with them.

I just made this fried rice and it’s so good! Perfect proportions of all the ingredients! I asked my teenage son to try a bite and he took the bowl away from me saying it was really good, and he’s tried a lot of fried rice since it’s a staple at family gatherings. I grew up on fried rice but have never liked it when I made it…my husband even made it better than me, until today. And the recipe only uses one pan so less clean up. Thank you so much for this recipe!
PS – I substituted the spam for Chinese sausage. I love your site and have tried several of your recipes which always turn out great!

This totally reminds me of home. We always had spam on hand. And always made fried rice with it! Now that I’m living with my fiance, (who is white) I didn’t think he’d like spam. Today I went out to buy some and pan fried it a little to eat with some rice. I will be making this for dinner tonight!
Recipe looks great. I’m thankful I bought a rice cooker with sautée feature. I can sauté everything in the cooker’ then when liquid is added it automatically switches to the next cook mode. One pot is my way to go. My friends at work were talking about rice cookers. I kind of laughed and said, you can cook rice in no time in the stove, why buy another gadget. The convencing part of their speal was, you can walk away, set a timer etc. just like a crock pot, which I happened to own a couple of. I happened to be walking through Costco and there she was, a shiny programable dream stainless steal, sautée, cooks rice, works as a crock pot, keeps warm, steamer basket, rice paddle, and was programable with delay feature. Sold. So that said, I’m making fried rice as I type this, sitting in my recliner, not standing by the stove …aaaaaw ya

Can I keep this in a crock pot to keep warm?
Without further recipe testing, I cannot advise if this can be kept warm in the slow cooker. Please use your best judgment for serving and reheating.
I actually tried keeping it warm in a crock pot myself for a potluck event and while it still tasted fine, the spam turned a brown color and didn’t look that appetizing.
