Hot Cheesy Corn Dip
A super easy and amazingly creamy corn dip that comes together with just 10 min prep. And it’s even made “skinny” with Greek yogurt!
I’m not much of a football fan. Actually, I’m not a fan at all. When I’m watching a game, I honestly have no idea what’s happening. Everyone seems to be running around and I don’t even know where the ball is half the time! The only thing I do know is when a touchdown happens. That’s about it.
But even though football is practically a foreign language to me, there’s something that I really love about it when it’s football season – it’s all the fun party food that comes with it, like this super cheesy corn dip.
With just a few ingredients and 10 minutes of prep time, this come together so easily before you pop it in to the oven until it’s bubbling over. Once it’s out of the oven, just dip right into that epic cheesy, creamy goodness. You can even make it in advance and pop it in the oven 30 minutes before serving – it’s that easy!
Hot Cheesy Corn Dip
Ingredients
- 3 cups corn kernels, frozen, canned or roasted
- 1 4.5-ounce can chopped green chiles, drained
- 1 ½ cups shredded mozzarella cheese, divided
- 1 cup plain Greek yogurt
- ¼ cup mayonnaise
- 2 tablespoons chopped fresh cilantro leaves
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- Kosher salt and freshly ground black pepper, to taste
- 1 Roma tomato, diced
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 375 degrees F. Lightly coat a 9-inch baking dish with nonstick spray.
- In a large bowl, combine corn, chiles, 1 cup mozzarella cheese, Greek yogurt, mayonnaise, cilantro, garlic powder, onion powder and oregano; season with salt and pepper, to taste.
- Spread corn mixture into the prepared baking dish; sprinkle with remaining 1/2 cup mozzarella cheese.
- Place into oven and bake until bubbly around the edges, about 20-25 minutes.
- Serve immediately, garnished with tomato, green onion and cilantro, if desired.

Okay so these new pictures are gorgeous and I’m SURE the new version of this recipe is delicious but I am in a little shock that your original (and quite different, if memory serves me correctly) Hot Cheesy Corn Dip recipe is gone. It was so SO SO good. My friends, neighbors, family, etc etc etc and I LOVED that dip and I just came back to grab the recipe to make it this weekend and am panicking a bit now, having promised your original recipe to friends for their party this weekend. I feel like the old one had Monterrey Jack cheese, canned corn, mayo, chiles, and maybe one or two other ingredients? Does that original recipe exist anywhere now? Or can you email it to me? I’m BEGGING. This new one looks quite a bit more heart-healthy but man, the old one was SO GOOD.

Can you use lo fat sour cream or regular lo fat yogurt instead of Greek yogurt?
Yes, sour cream can be used instead.
Never mind, I can’t understand American football either. I can manage Australia’s four different codes, but not American. But I DO understand that this dip looks absolutely delicious. Yes, frozen corn should work just fine.
