One Pot Andouille Sausage Skillet Pasta

This incredibly cheesy pasta dish easily comes together in less than 30 minutes in one skillet – even the pasta gets cooked right in the pan!
“One pot” pasta dishes are the best. They’re so easy to put together, and other than a cutting board for some prep work, only a single skillet ends up in the sink. That’s it. And if you’re anything like me, having less dirty dishes is always welcomed in my house.
Now this pasta dish is definitely one of those one pot wonders. It’s a simple sauté of smoked andouille sausage, and with a little bit of diced tomatoes, chicken broth and milk, the pasta gets cooked right in the skillet!
I was honestly a little bit skeptical about this but it really works, and the pasta soaks up all the liquid so don’t worry about having a soggy mess. The texture is absolutely perfect and with a little bit of cheese to top it off, you’ll have this cheesy, comforting pasta dish on your dinner table in less than 30 minutes!
One Pot Andouille Sausage Skillet Pasta
Ingredients
- 1 tablespoon olive oil
- 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- ½ cup milk
- 8 ounces elbow macaroni
- Kosher salt and freshly ground black pepper, to taste
- 1 cup shredded pepper jack cheese
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add sausage and onion, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes.
- Stir in garlic until fragrant, about 1 minute.
- Stir in chicken broth, tomatoes, milk and pasta; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
- Stir in cheese until melted, about 2 minutes.
- Serve immediately.

Your one-pot dishes are always favorites for my family and this was no exception. I happened to have some chicken chorizo sausages on hand so I decided to sub them in for this recipe and it was excellent. A quick warming and hearty meal – probably even more perfect for cool weather delight. I am excited to make it with andouille next time because there will definitely be a next time. Thank you!
Made this today for lunch for family. Delicious. I changed a little…used what I had, but overall followed recipe. I used Rotel vs diced tomatoes, smoked beef sausage vs andouille, and shaved Parmesan vs the pepper jack. We loved it and will definitely make it again! So easy and quick!!
Absolutely LOVE this recipe! I do change it up a little and it works perfect for me. 1/2 the onion. Can of Rotel instead of diced tomatoes. I add 1 cup of milk with a cup of water with the 2 cups of broth because I add a box (14.5 oz) of protein penne pasta. I also end up adding 3 cups of pepper jack cheese at the end. We love cheese! (Everything else is the same)
Great, easy recipe! I followed the recipe except I substituted the andouille sausage with a 12oz beef smoked sausage, cause that’s what I had on hand. It was delicious!!
The flavor is good, I just need to remember that it needs about half the liquid… it’s super watery!
Shocked how good this came out!!! I’ll never cook pasta separately again lol. Used rigatoni, added mushrooms half the amount of diced tomatoes but added a little tomato paste instead. It was delicious!
I have made this recipe 10 plus times, always a hit. I first made it just as the recipe states. Since then, I have changed out the sausage depending on what is on sale and doubled the amount. To kick it up, I use a can of Rotel tomatoes. To thicken, I use heavy cream instead milk. As for cheese, again, you can change out to your preference, for use, monterey jack. A++++++. What I also wanted share is that I needed to make this for a crowd so I tripled the recipe, making on batch at a time and added it to a crockpot. Set the crockpot to warm and had no issues with the pasta falling apart. This is a KEEPER!
Cheap, easy, and QUICK recipe! By far one of our favorite cheap meals. I did add creole seasoning (Tony’s brand) & some fresh hatch green chiles. That really adds some flavor with not too much spice! If you’re looking for some extra flavor/spice I definitely recommend creole & green chiles!
Be patient, not all stoves are the same. I took off burner when it was done and it thickened right up. I did add 1/4 of cream cheese only because I thought it might be too spicy for hubby. Wouldn’t change a thing, not runny whatsoever! Damn delicious!
So so good. I didn’t have pepper Jack cheese so I used Monterey Jack and added some tapatio for some spice. My husband loved it.

Although my finished dish ended up looking like pink brothy soup, I would make this again. Next time I will brown the sausage in the pan before adding the onion and garlic. I will also drain the tomatoes before adding because there was so much leftover liquid after the pasta was done cooking. Might throw in a little chopped spinach just to have a veggie in the dish. Overall, a great tasting, easy, weeknight dinner.
Made this recipe for dinner! Turned out good. I did half shallot and half yellow onions because that’s what I had on hand. I added Italian seasoning, crushed red pepper and some cream cheese at the end!
This is a hit in my home. I wasn’t sure whether to drain the tomatoes (diced) or not, so I did and used that liquid for part of the broth. I cooked the onion for a bit, then added garlic and sausage so as not to burn the garlic. Followed the recipe exactly. I was cooking this near lunchtime, and those who had just had breakfast ate two servings of this! I loved that the pasta took on the flavor of the sausage. Definitely a five star plus. And for those who are working or with big households (working!), this is an easy and flavorful recipe. Thanks to the chef!

Excellent! I didn’t have pepper jack cheese so I used crush tomato with peppers. Bow tie noodles really dressed it up
I absolutely love this simple recipe and have made it several times. For my kids i have had to make minor tweaks. My kids hate the dice tomatoes. I’ve omitted before, wrong idea, needs tomatoes. This time I used tomatoes paste, and it really kept flavor same as original. I also added kale to make it more a one pot meal so I don’t feel I need to make a veggie side. I always use chedder instead. My kids prefer smoke sausage over andouille, but this time around I stuck with the andouille, it is spicy. Really think any sausage is a winner in this dish. This was the first time my kids went back for seconds on this dish. Thank you for this recipe, it was easy to make my own, if not for my kiddos I would always stick with the original.
