One Pot Andouille Sausage Skillet Pasta

This incredibly cheesy pasta dish easily comes together in less than 30 minutes in one skillet – even the pasta gets cooked right in the pan!
“One pot” pasta dishes are the best. They’re so easy to put together, and other than a cutting board for some prep work, only a single skillet ends up in the sink. That’s it. And if you’re anything like me, having less dirty dishes is always welcomed in my house.
Now this pasta dish is definitely one of those one pot wonders. It’s a simple sauté of smoked andouille sausage, and with a little bit of diced tomatoes, chicken broth and milk, the pasta gets cooked right in the skillet!
I was honestly a little bit skeptical about this but it really works, and the pasta soaks up all the liquid so don’t worry about having a soggy mess. The texture is absolutely perfect and with a little bit of cheese to top it off, you’ll have this cheesy, comforting pasta dish on your dinner table in less than 30 minutes!
One Pot Andouille Sausage Skillet Pasta
Ingredients
- 1 tablespoon olive oil
- 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- ½ cup milk
- 8 ounces elbow macaroni
- Kosher salt and freshly ground black pepper, to taste
- 1 cup shredded pepper jack cheese
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add sausage and onion, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes.
- Stir in garlic until fragrant, about 1 minute.
- Stir in chicken broth, tomatoes, milk and pasta; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
- Stir in cheese until melted, about 2 minutes.
- Serve immediately.

This was amazing. I added 1/2 cup of cream cheese after i thickened the dish with a little of the juices mixed with cornstarch. Not too spicy but very favorful.
I did have to to tweak the style of sausage to what I had on hand, but this is delicious! I have made it many times, and have tried lots of different tweaks as well, like using chicken or adding in extra veggies. It’s really great no matter how I make it. Even my picky kids eat it! Fabulous! We made ours gluten- and lactose-free with Banza pasta, almond milk and goat cheese. It was a big hit! We used pasta sauce instead of the diced tomatoes (what we had on hand) and it was still wonderful. We also used Whole Foods 365 andouille chicken sausage (beware– it has pork casing). Just a perfect meal with a big salad. Thank you!

I made this tonight and my family loved it! I used Johnsonville smoked sausage (hard to find andouille where I live) and fusilli. I also added some torn up leaves of rainbow chard.
It remained nice and saucy and glossy even after I held it for a few hours in the pot.
When we were ready to eat, I put it back on the stove and added a bit more milk, brought it back to a simmer and added some more cheese on top.

So I made this with Cajun Andouille and it was amazing! I also used Rotel with diced green chilies and peppers instead of diced tomato and I also substituted beef broth for the chicken broth. Also I used regular shredded Cheddar at the end. What a wonderful turnout! It is DELISH!!!! Obviously you have to like spicy food-my favorite!!! Really good! Thanks for the recipe @damndelicious!!!

This recipe is on frequent rotation at our house. Delicious as is, and we often add in kale and other random veggies that are in danger of going bad. Big fans.
My gramps says “not bad at all” I cut the recipe in half since there’s only 2 of us. Still had plenty of leftovers. I used rotel and it was a bit spicier than I expected but still very good. Next time I would add a little more seasoning as I found it to be a little bland.

Delicious. I didn’t have elbow macaroni, so I used penne. Also used Rotel diced tomatoes for a little more heat. Super easy and yummy.

It’s okay but a little bland. I added a generous amount of grated cotija and bingo!
It’s a very good dish very filling I used mild cheddar instead of pepper jack and the sausage has enough spice but I also used heavy cream instead of milk and added cream cheese.
This was delicious and easy to come together!
DAMN Delicious, I followed directions for pasta 7-8 minutes and I used a lot more cheese
Very tasty. Used an uncooked roll of andouille so took a little longer to cook but loved the simplicity and robust flavor. Wife even asked if she could take leftovers for lunch.

This recipe is so good! I went with 1 can of cream of chicken instead of chicken broth to have a thicker sauce! Omg! don’t regret it! Cooked the macaroni separately and added spinach and it was delish!
