Blueberry Vanilla Muffins
These light and airy muffins are the perfect way to start your mornings, loaded with plump, juicy blueberries and extra vanilla goodness!
I hope you all had a great 3 day weekend. Jason and I made a short trip up north past Sacramento to take a look at one of the puppies we are going to adopt. Yes, we are expectant corgi parents! I’ve been trying to keep it under wraps but with a face like this, how could you keep it to yourself?
This little guy definitely made his way to my iPhone home screen, and every time I see his cute little face, my heart melts just a little bit. He’s only 6 weeks old right now but we’ll be able to take him home at the 9 week mark. It’s only 3 weeks away but this may just be the longest 3 weeks of my life! But before I go on and on and on about my new love for this puppy, let’s talk muffins.
I’m pretty sure you’ve all had a blueberry muffin. It’s pretty much one of those standard muffins, whether you pick one up at the grocery store, at Starbucks, or those massive Costco-ones. I’ve made several blueberry muffins myself – from a granola topping to a blueberry jam swirl.
But this one here – this may just be my favorite blueberry muffin creation yet. There’s nothing really fancy going on here except for one very special ingredient – vanilla bean paste. You can find this either at Williams-Sonoma or Amazon.com. I prefer the latter because I’m too lazy to leave the house and with Amazon Prime, everything gets to your door in 2 business days. But I digress.
Now these muffins – they’re loaded with juicy, plump blueberries in the most light and fluffy muffin just blooming with vanilla goodness. And with a sprinkling of sparkling sugar on top, you get a nice crunch every time you take a bite into these. They’re perfect for breakfast-on-the-go or even as a snack when you need to satisfy your sweet tooth.
Either way, just be prepared to have at least 3 of these muffins in a single serving – you won’t be able to stop at just one!
Blueberry Vanilla Muffins
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups buttermilk
- ⅔ cup sugar
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 tablespoon vanilla bean paste
- 1 cup blueberries
- 2 tablespoons sparkling sugar
- Preheat oven to 350 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside.
- In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt.
- In a large glass measuring cup or another bowl, whisk together buttermilk, sugar, butter and egg. Stir in vanilla bean paste. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and gently toss to combine.
- Scoop the batter evenly into the muffin tray. Sprinkle with sparkling sugar. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean.
- Remove from oven and cool on a wire rack.

Can this recipe be used for bread instead of muffins?
HI. I can’t seem to find all purpose flour here in australia so can i use self rising or plan flour.?
Plain flour would be a more suitable substitute.
Can I add a bit more sugar to sweeten them jut a tad? Also, how do you get your berries to not fall to the bottom. Thanks.
Yes, absolutely. You can also toss the blueberries in some flour so they do not sink to the bottom.
THESE ARE AMAZING!!!!! I will definitely be making them over and over again! Thank you SO much for another great recipe!!
Can regular vanilla extract be substituted for the vanilla bean paste? If possible, what amount? Always looking for blueberry recipes. Just found your website and you have such a wide variety of recipes for any palate!
Yes, absolutely. 1 tbsp pure vanilla bean paste = 1 tbsp vanilla bean extract.
Sounds amazing – blueberries and vanilla – yummmmm. I’m assuming these are meant for the ‘regular’ size muffin tins. Can, and how, could you adapt this recipe to the oversize muffin tins?
Yes, you can make these into oversized muffins but you would have to extend cooking time as needed.
Is there any substitute for the buttermilk? would love to make it
You can create a buttermilk substitute with plain milk and lemon juice. Here’s a great tutorial you can follow: http://www.thekitchn.com/how-to-make-a-quick-easy-buttermilk-substitute-cooking-lessons-from-the-kitchn-185757.
Congrats on the aDOGable member to your family!!!
I don’t mean to sound stupid- but what is sparkling sugar? and where do I find this?
Not stupid at all! Sparkling sugar has a coarse texture with an amazing sparkle, usually for decorating cupcakes/cakes. You can find these at a crafts’ store or amazon.com.
These were great! I substituted a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) for the egg due to an egg allergy. I had to bake for about 25 minutes. Next batch I’ll use chocolate chips instead of blueberries for the kids 🙂
OMG, these muffins are amazing! I’ve already made them twice this week and my family loved them! Even my niece who is not a big fan of blueberries raved about them. I splurged for the vanilla bean paste and it was completely worth it! Oh, and I actually got 16 muffins out of my batter. Four extra muffins for ME to eat! YAH me!!! Thank you for the wonderful recipe. I’ll be holding on to this one!
Made the muffins this morning – they were a huge hit! Great recipe – thanks for sharing!!
Oh. My. Goodness. This is without a doubt the best blueberry muffin I’ve ever had! The vanilla bean paste (<3333) makes it, I would definitely tell anyone to buy some! I even ran out of eggs and had to substitute 1/4 c. applesauce and they still came out perfect. Five stars!
Butters is incredibly adorable!!!
Oh. My. Gosh. This is the BEST recipe! My ten-year old made these this week – opting for loaves instead of muffins – and I have eaten all of them but one… Since they are so good I plan to share your recipe on my blog today – http://www.mumhowmuchlonger.com – but shall be giving FULL kudos to you with a link back to the original recipe at your WONDERFUL site! Thank you 🙂
Can vanilla extract be substituted for vanilla bean paste? That’s all I have on hand and these muffins look delish!
Yes, you can certainly substitute vanilla extract, although the vanilla bean paste is really the star ingredient in these muffins!
Mmmmm, these do look sooooo good. I want to forget going to uni and get baking. Possibly more important though, what a cute puppy?!! =)
I just whipped up a batch of these BB muffins and I have to say that they are the best I’ve ever had!! Thanks for sharing this delicious recipe.
Love how fluffy the insides are! I imagine a little grating of lemon or orange zest would brighten these up super much 🙂 Though, these just look perfect the way they are.
These muffins look amazing! Oh my gosh. I have just gone way too long without making blueberry muffins. They are the best ever.
Aww, your pup is so cute!
Pinning these muffins.
Who doesnt want a blueberry muffin. Love the addition of vanilla
Puppies and muffins!! This is the best post ever! Congrats on the little guy :). These muffins look amazing!! It’s begining to smell and look like summer with these!
I love all of this so much! Blueberry muffins are my all-time favorite, and I can’t believe I have never used vanilla bean paste! I’m kind of in love with Amazon Prime right now. My husband may be getting worried about the never-ending boxes showing up at the door!
Oh, and I fully plan on curing my next wave of baby fever with a puppy. 😉 Yours is adorable.
Thank you, Nicole! And Amazon Prime is the absolute best. The boxes are slowly piling up at our house and I keep having to make trips to the recycling center on a weekly basis!
was curious about your muffin secret & was surprised to see the corgi.
congratulations! i have four of them. though you didn’t ask my advice,
i’m about to give it.
your puppy should stay with it’s mother until it’s 12 weeks old.
i’ll say no more.
Thank you so much for your advice, but our breeder is a veterinarian herself and we trust her completely when she advises that we can take the pup home at the 9 week mark.
These muffins stopped me in my tracks on Tasteolgie — they’re beautiful! I discovered vanilla bean paste last year at Whole Foods…I feel that it’s much more cost effective than buying expensive vanilla beans. It must be just delicious in these muffins….and I love your puppy, too!
Congrats on the new puppy. I just recently ended up with 3 and they’ve made life so much better.
Congrats on the puppy!!!! You know how much of a dog lover I am!!! Can’t wait to see pics and show my Hula girl..haha

OH. MY. GAA!!! I just want to snif his face! how incredibly sweet! I am such a sucker for puppies…. seriously, I could snif them all day. And I LUV vanilla bean paste, I’ve got two jars at home and I’m definitely going to try these muffins. It’ll bring a little warmth and sweetness into this seemingly endless cold dreariness….. Puppies & Muffins! what a good day!
