One Pot Taco Pasta
All the flavors of a taco in an easy pasta dish that the whole family will love. It’s so easy, even the pasta gets cooked right in the pot!
You know I’m all about one pot meals. They are super easy to whip up, and clean up is a breeze. And dishwashing is not a favorite chore of mine so the less dishes I have to clean, the better, especially when it comes to making tacos.
Now I’m somewhat obsessed with tacos but homemade tacos require too much dicing and chopping. Fortunately enough, this taco pasta dish comes together so easily and effortlessly in one skillet. And if I’m being honest, I’d much rather gobble up this inside-out cheesy taco pasta any day of the week!
One Pot Taco Pasta
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- Kosher salt and freshly ground black pepper, to taste
- 1 cup canned corn kernels, drained
- ½ cup canned black beans, drained and rinsed
- 1 4.5-ounce can Old El Paso™ chopped green chiles, drained
- 1 14.5-ounce can diced tomatoes, undrained
- 1 cup Old El Paso™ mild taco sauce
- 1 cup salsa
- 2 cups elbow macaroni
- ¾ cup shredded cheddar cheese, divided
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef, onion and garlic. Cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat.
- Stir in corn, black beans and green chiles until well combined. Stir in tomatoes, taco sauce, salsa, pasta and 2 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes. Stir in cilantro.
- Serve immediately.

a taco pasta is a pretty awesome idea.. definitely curious to know what it tastes like – means i will be having to recreate the recipe. thanks for sharing!
This combines two of my loves….Mexican and pasta. I love how simple this is and it looks super amazing!! This will be a perfect weekday dinner, and I can’t wait to try it out!
Great comforting and delicious dinner!
I love everything about this!
One pot always floats my boat. Saying that reminds me of rub a dub dub—three men in a tub. Aaah the mind. Back to food. Tex Mex is always popular with my family members. A little different spin on it with the pasta.
I love making pasta with Mexican flavors! This looks great!
I’m all about the one pot meals too! Gonna try this tonight, looks filling and yummy. 🙂
Just had to stop in and say I’ve made this, like, once a week since you posted this recipe. Soooo good and easy, everyone loves it! 🙂
Nice easy recipe. Thank you.
Every time I make something remotely Mexican, the husband practically proposes all over again. Secret to marital bliss right here!
I actually don’t like tacos. How-ev-er, it’s not the flavours that I don’t like..it’s the tortillas. So, you just solved my life long problem! Pinned!
Looks absolutely delicious! Especially the diced avacado I see in the photo. Is that added fresh after cooking stated recipe? So glad I stumbled upon your recipes…I look forward to my emails now!
Yes, fresh avocado is added simply as a garnish. It’s completely optional if you’d like to add it in.
Italy meets Mexico! This looks great 😀 And the saving of time for it is so convenient 😀 x
Hi Chungah, thanks for sharing another great recipe (with as always awesome photos). I love one pot meals too … I too hate dishes (there’s way more fun things to be doing than cleaning up)!!
