Cheesy Bacon Spinach Dip
The best and cheesiest, creamiest dip you will ever have – after all, you just can’t go wrong with bacon!
It’s New Year’s Eve tomorrow night and I will be doing nothing except stuffing my face with this dip. That and finally starting Scandal on Netflix. I’m ending this year with a bang, guys.
And when I say “bang”, I mean cheese, some more cheese, and bacon. With a side of creaminess, of course.
After all, once that calendar hits 1/1/2015, I’ll be starting those juice cleanses and “clean eating” nonsense so I might as well get in all this bacon when I can!
Cheesy Bacon Spinach Dip
Ingredients
- 6 slices bacon, diced
- 8 ounces cream cheese, at room temperature
- 1 cup sour cream
- ¼ cup freshly grated Parmesan
- 2 tablespoons mayonnaise
- 1 tablespoon Worcestershire sauce
- 2 cups baby spinach, chopped
- 1 cup shredded mozzarella cheese, divided
- 1 cup shredded cheddar cheese, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- Preheat oven to 400 degrees F. Lightly oil a 9-inch baking dish or coat with nonstick spray.
- In a large bowl, combine cream cheese, sour cream, Parmesan, mayonnaise and Worcestershire. Stir in bacon, spinach, 1/2 cup mozzarella cheese and 1/2 cup cheddar cheese; season with salt and pepper, to taste.
- Spread bacon mixture into the prepared baking dish; sprinkle with remaining 1/2 cup cheeses.
- Place into oven and bake until bubbly and golden, about 20-25 minutes.
- Serve immediately, garnished with bacon and parsley, if desired.

Hmmm. I wanted to love this, cheesy bacon should be yum. It needed something else. All I could taste was cream cheese.

Hello! Tied to the question above, I’m planning on making this for my work lunch Christmas party. So I’ll be prepping it the night before. When should I bake it though? The morning of? The party doesn’t start until noon, but I do have the option of reheating it for 10 mins or so right before the party… would that change the texture of things?

Wondering how this keeps for leftovers? Only 3 to eat it. Trying to decide if I should make it or not since I know we can’t eat it all alone.

Everyone loved this dip…actually it was the hit of the party! I added a few extra slices of crumbled bacon but other than that followed the recipe to a tee. Will definitely make again.
Are you supposed to cook the spinach before putting in the dip?
Nope – there’s no need to!
I made this yesterday for a party we had at the house. I took it out of the oven and as soon as it was cool enough to eat without people burning their mouths it was gone. Just gone. There were other foods on the table that were reached over and around to get to this dip. I had several people ask for the recipe on their way out. Again, thanks for another great recipe.
I had a halloween party and made this dip. Literally everyone said it was the best they’ve ever had! This is definitely going to be a party staple! so easy and delicioussss!! I was not shy with that Worcestershire sauce! YUM!

Yes, it should be fine to prep the night before but it may be best to leave it out at room temperature for at least 1 hr prior to baking.
Would frozen spinach work or does it need to be fresh
Frozen spinach should work just fine.
If I am using fresh spinach and doubling the recipe, how many bags of spinach? I bought two with 5oz each. I know the spinach will cook down so should I buy two more?
Just found your website and love the appetizers; will try some before I go back to work. I try not to use name brand seasonings, like Emerils, not cost effective. Can you include an alternative to “name brand” seasonings in the future?

I used this recipe to bring to a work party. It was a super bowl party where we voted for the best soup, but a lot of my coworkers said they wished they could vote for this dip instead! Thanks for the recipe!
And for the crockpot question above: I cooked my in my crockpot for about an hour and a half before we ate all of it (and I even made a double batch!).

I used toasted baguette slices but this dip would really go well with anything!
