One Pan Garlic Ranch Chicken and Veggies
Crisp-tender chicken baked to absolute perfection with roasted carrots and potatoes – all cooked in a single pan!
With my upcoming cookbook coming Fall 2016, I have been very short on time for anything and everything so I am in need of all shortcuts, like this one pan meal.
Now this isn’t your ordinary one pan dish where your main entree comes together in a single pan. Nope, this one pan meal actually has everything you need, including your veggie side dish. And with Hidden Valley’s Original Ranch Salad Dressing & Seasoning Mix, the ingredient list is super short, and packed with tons of flavor.
I should also mention that this is not a sponsored post. I just really love the Ranch seasoning mix.
Now the chicken is lightly coated with brown sugar – just a single teaspoon per chicken thigh – giving you that hint of sweetness with the savory seasonings of Ranch. And when coupled with the tender roasted veggies, it is absolute perfection. And you only need one. single. pan.
Done and done.
One Pan Garlic Ranch Chicken and Veggies
Ingredients
- 8 teaspoons brown sugar, divided
- 8 bone-in, skin-on chicken thighs
- 16 ounces baby red potatoes, halved
- 16 ounces baby peeled carrots
- 2 tablespoons olive oil
- 1 (1-ounce) package Ranch Seasoning and Salad Dressing Mix
- 3 cloves garlic, minced
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Using your fingers, work the brown sugar, about 1 teaspoon per thigh, onto both sides of the chicken.
- Place chicken, potatoes and carrots in a single layer onto the prepared baking sheet. Drizzle with olive oil and sprinkle with Ranch Seasoning and garlic; season with salt and pepper, to taste.
- Place into oven and roast until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.* Then broil for 2-3 minutes, or until caramelized and slightly charred.
- Serve immediately, garnished with parsley, if desired.

I usually use chicken breast and any veggies I have on hand. I also use Stevia brown sugar blend to cut down on the sugar and calories. Thank you!

Do you think this could be made with chicken Brest salad or tenders?
Made this last night and it will definitely be put in my meal rotation! My husband and daughter raved about it. I thought it sounded weird to put brown sugar on the chicken, but that was the added bonus taste that made this over the top. I changed a couple of things that did not affect the integrity of the recipe. I was out of potatoes, so I added fresh broccoli toward the end. I also put onions and bell peppers on the bottom of the pan to rest the chicken on. That was just to amp up the veggie content. Fabulous recipe!
I just cooked this for 4 adults and 4 children (ages 5-10). Everyone LOVED the meal. It was perfect and we still had leftovers. I did serve a side salad with it, but it was plenty of food. I followed the recipe to the “T” and it came out perfect. I did add a little bit of salt and pepper under the skin to add a little more taste to it (recommended from one of the reviewers). I also used a larger pan (14.5″x20.5″) and everything fit perfectly. I also brought my chicken thighs to room temperature since some people were saying their chicken wasn’t fully cooked. I cooked it at 400 degrees and it was done in about 28 mins. The chicken was cooked thorougly and so were the veggies. I will MOST DEFINITELY cook this again as it was easy, tasty, and easy clean up. Tried this recipe during the Covid stay-at-home time. It is fantastic!! It is so delicious that my 13 yr old son requested it for his birthday dinner and even helped make it!! I use half white and half sweet potatoes and add sliced onions to the mix as well. We love the flavors of sweet and savory together. Thank you for this delicious recipe!!
Okay – honest review. I thought maybe my family would be weirded out by the brown sugar & ranch combo.. But it absolutely worked!
For those that said the chicken was bland, I opened a pocket between the skin and meat and rubbed a bit of salt & pepper on the meat, both sides. Then, rubbed the brown sugar as instructed. I did up the temp to 410 for about 35 mins. I probably didn’t have to, but I got worried about the comments saying how it wasn’t cooked all the way. The chicken came out moist but my carrots did get a little charred on the bottom but it wasn’t like they were burnt.
I did have to use two sheets, one for chicken and the other for veggies. I used about half a package of the ranch for the chicken & the other half for veggies.
My daughter and bf really enjoyed it, as did I. Will def make again and will cook it at 400. Successful recipe!

can precooked chicken be use ? was thinking of marinating chicken in dressing meanwhile roasting vegetables in oven and only putting all together at end how long would i just cook veggies. any other suggestions

Make your own mix of Ranch seasoning. Lots of recipes out there for it.
Do I put the chicken thighs skin side down or up on the baking sheet?

Would it make much difference to substitute boneless chicken strips in place of the thighs? Most of the people in this family are not fans of dark meat

I usually love to read comments left by others who have tried a recipe in order to get helpful, useful tips. As I read some of the comments left for this recipe I wanted to poke my eyes out with a fork! What is wrong with some of you people? A baking sheet recipe is just that….everything cooked on a baking sheet. If it doesn’t all fit…use two baking sheets. And..it’s not a crock pot recipe. Wasn’t conceived as one and will never be one. If you ask if rice can be substituted for potatoes you should not be making this dish. If you can’t figure out how to substitute one veggie for another or if you can’t test your chicken to see if it’s done…put your pot holders down and step away from the stove. If you have a problem with an ingredient, like brown sugar, use honey or search for a recipe without added sugars to begin with. Same with MSG. Please think before you leave a comment. Comments are meant to help the recipe creator and those trying the recipe.

Made this easy dish today! Instead of brown sugar I made a 50/50 mixture of soy sauce and white vinegar and had the thighs sit in it while prepping. Followed everything else the same. The family loved it and kids even had seconds. Will be making this again!
