Thai Pineapple Fried Rice
Ingredients
- 1 cup quinoa
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 2 teaspoons sugar
- 1 teaspoon red chili paste with garlic, optional
- 2 10-ounce packages Green Giant™ Sautés Thai Coconut
- 2 cups diced pineapple, canned or fresh
- ¼ cup thai basil leaves
- 2 tablespoons peanuts, chopped
Instructions
- In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, sugar and red chili paste; set aside.
- Cook Green Giant™ Sautés Thai Coconut according to package instructions.
- Stir in pineapple, basil, quinoa and soy sauce mixture. Cook, stirring constantly, until heated through, about 2 minutes.
- Serve immediately, garnished with peanuts, if desired.

I think there is something wrong on this recipe. The ingredients list and the directions list do not agree. Ham, garlic, white pepper, and onion are referenced in the directions but not in the ingredients, and the sauté package is listed in the ingredients but not in the directions. It looks like two different recipes?
As an experienced cook I use your site frequently, but I am going through some of my favorite websites/recipes and downsizing and simplifying them to make a notebook for a daughter who is getting ready to leave home for her first apartment. Many of your recipes are included!

Yummy! I have tried pineapple rice just once before. This is a great recipe! I would love to try this out at home.
I want to try this SO badly but no grocery stores around me carry the green giant sautees. Are the spices in this Sautee essential to the recipe or do you think I could away with a bag of mixed veggies close to these? Or any other ideas?
The spices that come in the packaging are key ingredients of this recipe. Without them, there would be no flavor! But please feel free to browse through the other Asian Inspired recipes on my site for ideas/inspiration.

All of the Saute’s are gluten-free except for the Indian Spiced Lentils which may contain wheat ingredients.
