Slow Cooker Cheesy Breakfast Potatoes

This is the ultimate breakfast worth waking up to! Easily made right in your crockpot. Set it, forget, and devour!
If these potatoes make an appearance on my breakfast table every single morning, waking up will never be an issue.
Seriously. How can you resist breakfast potatoes, with andouille sausage and cheesy goodness?
You just can’t. It’s impossible.
And you know what? It’s just so stinking easy that you can actually make this every morning.
All you have to do is add in your ingredients right into the slow cooker. There’s no cooking, no sautéing nor searing. Throw it right in, set it and forget it.
It’s a true crockpot meal!
Slow Cooker Cheesy Breakfast Potatoes
Ingredients
- 3 russet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 1 12.8-ounce package smoked andouille chicken sausage, thinly sliced
- 1 ½ cups shredded cheddar cheese
- ½ cup sour cream
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- 1 10.75-ounce can condensed cream of chicken soup
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Place potatoes, bell peppers, onion, chicken sausage, cheese, sour cream, oregano and basil into a 6-qt slow cooker. Stir in chicken soup; season with salt and pepper, to taste.
- Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours.
- Serve immediately, garnished with parsley, if desired.

Can you use frozen cooked potatoes??

Could I prep the veggies and meat then freeze? Take out the day before to let thaw and then add the dairy and soup?

I must have done something wrong. It cooked 4.5 hours on low and then 3 hours on high and some of the potatoes are still raw.
Slow cooker is working fine.
Hi Laurie! It sounds like perhaps your potatoes were cut too large. They should be diced very small to ensure they cook through in time. Hope that helps!
Hi I made this recipe last night and I had a couple questions. I originally put it all in and started cooking it at 12:30am I put the crockpot on low. I also used frozen potatoes instead of regular. I woke up at 4:30am and my potatoes looks like mashed potatoes. Luckily I had a bag of simply potatoes in my fridge that I added to it. I switched the crockpot to warm. That saved the potatoes and made it better. Then we didn’t wake up until 9:30am the next morning and I was hoping it was still good because it had been in there for 9 hours! It was a warm breakfast to wake up to and it smelled good but I was just wondering if that’s too long to eat? Next time should I put it away at 4:30am and re warm it? Did I do something wrong with my potatoes? Should I have used regular potato’s to avoid them becoming mushy? My husband loved it btw! Thanks! I’ll definitely be making this again!!
Hi Rachelle, unfortunately we can’t say with certainty what the issue might have been in this case since you used frozen potatoes and we have not tried that ourselves. Glad it still turned out ok! If you have the same issue again using regular potatoes next time, let us know.
Your recipe, as written, is absolutely perfect. I have had it in a 200° slow cooker for 6 hours and it’s perfect. I’ve never had a more delicious cheesy potato recipe. I can’t wait until my wife and daughter tastes it. And my son gets home for Spring Break tomorrow and he’ll love it, as well. Thank you so much for your ideas. This recipe was mostly good. For one, I suggest cooking the potatoes way longer. I diced mind super small but still cooked it for five hours on high and it was still not totally cooked. But, I can’t blame the recipe for that really. To get them more cooked, I put the potatoes in a pan, cooked it at 425, and it was almost perfect. Super yummy otherwise!
If using the frozen potatoes, should I thaw them before hand? Will it take longer to cook if they are frozen?

So I made this the other morning to serve for breakfast at a moms group I’m apart of. I followed the recipe exactly. The flavor was good but it was more of a potato soup. I had to thicken it with flour and water just to be able to serve it on a plate instead of a bowl. I don’t think I would make it again honestly. But this recipe has potential. Maybe no cream of chicken soup? I don’t know. But I’m glad I tried it.
Same thing happened to me! Not sure if if was water from rinsing the potatoes and peppers? Or if I didn’t add enough cheese but everything came out more like soup? Any recommendations on what I did wrong or could fix? Either way, the potatoes were delicious and the smell was so amazing yo wake up to!!

Same!! I used a small dice and no where near cooked at the 5 hour mark on low. Maybe i’ll try the recipe on high next time. I’m glad I tested this prior to having guests over.

Yum! I tried this recipe yesterday and it was so delicious. My husband asked me, “how did you you make this sauce?” We both enjoyed every bite! I didn’t have time to make it in the crockpot. However,the stove top worked well! Instead of the chicken sausage, I used beef smoked sausage. Can’t wait to eat the leftovers. Thanks for a wonderful recipe.
I’m planning to make this for my side dish at my wedding reception in 2 weeks to 40 people! I will be serving brunch that includes:
– Croissant sandwiches (sausage/bacon, cheese, egg patties and either a pesto type or a chipotle spread)
– fruit (bananas, apples and strawberries)
– Fruit dip (cool whip, vanilla pudding mix, milk and amaretto).
– Water (with lemon/cucumber), coffee and orange/apple juice combo.
In your opinion, either how many would this feed so I know how much to make or an easier question for you is what is the total volume of this recipe as is?

Love your site and recipes! I always come back to this site when trying new recipes. Inquiring about the overnight cooking option. I read in your comments to use the WARM function to keep it warm. Do you mean cooking on warm? Or cook it at either HIGH or LOW function then switch it to WARM? Just trying to see if it is a recipe I can set as I’m going to bed and then wake up to breakfast 🙂

If you find a recipe that is not to your taste then don’t make it. If however, the recipe sounds good but you feel that it is to high in fat and you can sub fat free or low fat products then you make the changes. As in this recipe fat free or low fat sour cream Healthy request soup and reduced fat cheese. I have make comments about recipes that are ridiculously out of control but I would never get personal and attack the person who published the recipe. An apology is called for in this incidence. Being plain mean and rude is never acceptable.

If I used O’Brien frozen potatoes for the potatoes and peppers, how much should I use? This recipe looks great! If someone doesn’t like it they can just keep looking. This is obviously a special occasion dish….everything in moderation!
I actually haven’t tried O’Brien frozen potatoes in this recipe so I can’t really say for sure. Maybe 1-2 bags? You can always add more as needed! 🙂

Generally, 2-3 medium russet potatoes is equal to one pound.

What does “thinly sliced” in a recipe actually mean?
Because the photos show 1/4 or larger slices of sausage. I run into this often and thought I should ask.
I would appreciate recipes fully cooked in a slow cooker rather than partially cooked (if at all) for the photo of the finished dish. And are you gaining weight? I am with eating many of the slow cooker dishes.
Take a look at this one “Cheesy Breakfast Potatoes”; cheese, cream, condensed cream of chicken soup, sour cream, sausage. High in fat and salt. Are you feeding this to your kids with a couple of eggs or toast? Wow. Don’t think I’ll be making this one.

The slices don’t have to be exact here – that’s the beauty of a slow cooker recipe. There’s a lot of room for forgiveness.
Am I gaining weight? I sure hope not! I work out 7x a week doing a combination of pilates, spin and Barry’s bootcamp, and I also eat in moderation to maintain a healthy lifestyle.
Am I feeding this to my kids? I actually do not have kids. If you do not wish to try this recipe, that is completely fine. I did not mention that this was a healthy recipe by any means. I agree! People are rude and try to follow up with “but I love what your doing!”. If you want to stay slim while eating this type of food, it’s called “moderation” and “exercise”.

Heather- Wow are you judgmental. I would definitely feed this to my kids. Maybe not every week but what a nice treat every month or so. Its not going to kill them. A southerner, our food is definitely not known for being “healthy” and NO I am NOT 300 lbs sitting on my couch eating Bon bons!!! If people do my like the recipe, why not just keep scrolling? I have overnight guest arriving soon, and this appears to be the answer to a quick and easy breakfast. As all of your recipes are, it looks colorful and delicious.
This recipe sounds delicious, but I am wondering about the cooking time. If you are going to wake up to these potatoes you would have to put them together in the middle of the night with a 4 to 5 hour cooking time. Do you think it would be alright to set the timer function on the slow cooker to start cooking later. I wonder about the safety issue with the sausages. This might be a better brunch dish. What do you think?
Mary, if you have a slow cooker with the WARM function, you can cook this overnight and have it kept warm until ready to serve.
