Roasted Parmesan Asparagus
This is one of the easiest and most flavorful ways to prepare this veggie. And you know you can’t ever go wrong with Parmesan!

Butters and I took a quick getaway trip for a week, eating croissants and crepes left and right. Although he did tear up an entire roll of toilet paper in the hotel bathroom today. But still, a vacation is a vacation. And you can follow our entire journey on snapchat (username: @chungahrhee).
Again, it’s just about croissants, crepes and Butters. And the occasional toilet paper mess.
But really, what we need to talk about are these asparagus spears – these Parmesan smothered spears, simply roasted with a few pantry ingredients.
Yet, this easy method is by far one of the best ways to prepare this veggie. It’s tender, crisp, and unbelievably juicy, with just enough melted cheese on top.
I’ll honestly just take a plate of this right now with another chocolate croissant.

Roasted Parmesan Asparagus
Ingredients
- 2 pounds asparagus, trimmed
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper, to taste
- ½ cup freshly grated Parmesan
- 2 tablespoons balsamic vinegar
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Top with Parmesan.
- Place into oven and roast for 10-12 minutes, or until tender but crisp.
- Serve immediately, drizzled with balsamic vinegar.
