Thai Salmon in Foil
The flavors are sealed right into a foil packet with no clean up! The salmon comes out so tender/juicy. Sure to be a family favorite!
It’s crazy.
I was never a fan of Thai food until 3 years ago.
Really.
I think it was the smell of fish sauce. I couldn’t stand to be near it.
I still can’t stand to be around it – except when it’s added to Thai-inspired dishes, the flavors are AH-MAZING.
Or can I say, the flavors are “lit”?
A few of my friends were discussing the definition of “lit” last night, and we came to the conclusion that it meant “crazy good”.
Is that right you guys?
Because after that, we were basically sending each other snaps, being in bed at 9:00PM, or dancing to Spice Girls in front of our dog and cat with the caption: Our Saturday night is lit.
So basically. what I’m trying to say here is this:
This salmon is legit lit. With no clean up.
Boom.
Thai Salmon in Foil
Ingredients
- ½ cup sweet chili sauce
- 2 tablespoons reduced sodium soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon freshly grated ginger
- Juice of 1 lime
- 1 teaspoon Sriracha, optional
- 2 pounds salmon
- ¼ cup peanuts, chopped
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Preheat oven to 375 degrees F. Line a baking sheet with foil.
- To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside.
- Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the chili sauce mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
- Place into oven and bake until cooked through, about 15-20 minutes.
- Serve immediately, garnished with peanuts and cilantro, if desired.

I made this for dinner tonight and it was amazing. I also did a packet of large shrimp at the same time and had a hard time deciding which I liked more. Definitely a recipe that is going in my “favorite file” Thank you for sharing!
Would any other kind of fish be a good substitute? We live in Kansas and any kind of good fish is hard find or is really expensive. How about frozen?
Yes, you can substitute other fish but cooking time may have to be adjusted accordingly. I also recommend using thawed fish, not frozen.
This might be a stupid question, but do you leave the skin on or off the salmon?

We loved this recipe! My seven year old daughter had thirds and declared this is the best way she has eaten salmon ever! Props to you Chungah – your recipes always seem to work. I used Viet Huong Fish Sauce for this one. It a product from Hong Kong.

Top some that it may helpful though, I happened to ran out of chili sauce so I subsitiuted it with chili powder instead. It still worked wonders!

I want to put this atop a SALAD. What kind of dressing would compliment this thai salmon do you think? Am thinking about some mixed greens–maybe some pine nuts– not sure about a cheese– and then need to dress the greens with something. Don’t want it to ‘collide’ with the thai sauce in the salmon. What a great idea! I’m thinking you can even go with a Thai-inspired dressing mixed with lime juice, brown sugar, fish sauce, etc. Hope that helps!

I’d like to suggest some bean sprouts! Thai dishes have lots of bean sprouts and goes we’ll it’s nuts, coriander as well. I topped mine with fresh chopped tomatoes and coriander! ! It was heaven!

I’m considering making this. Is sweet chili sauce the same as chili garlic sauce?
And I need a substitution for the fish sauce. Some people say anchovies, some say Worcestershire sauce, some say soy sauce and vege chicken broth. Which works best here?

Sweet chili sauce is actually not the same as chili garlic sauce.
You can use any of the above-mentioned substitutes – it’s really up to you and what you have on hand.

Sweet chili sauce is a popular Thai condiment. I prefer to use Mae Ploy Sweet Chilli Sauce.
