Zucchini Parmesan Foil Packets
Minimum effort, zero clean-up and easy serving! These can also be grilled or baked so you can have it anytime, anywhere!
Is it me or are you guys just as obsessed with foil packets as me?
Obsessed may be an understatement actually. It’s my life.
Because basically everything is getting shoved into a foil packet and baked (or grilled) right now – it just depends on my mood.
And with this asian salmon in foil and these parmesan zucchini foil packets, I’ve had this same dinner nonstop for weeks.
No, wait. Sometimes these zucchini packets are my only dinner. That’s all you really need – veggies and Parmesan cheese.
Oh, and I haven’t done dishes in two weeks with these foil dinners so there’s that.
Zucchini Parmesan Foil Packets
Ingredients
- ¼ cup unsalted butter, melted
- ¼ cup freshly grated Parmesan
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Kosher salt and freshly ground black pepper, to taste
- 4 zucchini, cut into 1/4-inch thick rounds
- ¼ teaspoon crushed red pepper flakes
- 2 tablespoons chopped fresh parsley leaves
Instructions
- PREHEAT a gas or charcoal grill over high heat.
- WHISK together butter, Parmesan, basil and oregano; season with salt and pepper, to taste.
- CENTER zucchini on a sheet of Reynolds Wrap® Heavy Duty Foil. Spoon butter mixture over zucchini. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
- PLACE foil packets on the grill and cook until just cooked through, about 15-20 minutes.
- SERVE immediately, garnished with red pepper flakes and parsley, if desired.

I don’t grill. how long in the oven and what temperature?
This was so delicious. I followed the recipe exactly. When we opened the foil I was a bit hesitant because I don’t like watery zucchini but once we took one bite my opinion changed 100%. This was so good and easy to make. I will definitely be making this again.

These can be baked at 425 degrees F for 15-18 minutes.

Adding yellow zucchini would add an extra splash of colour.

Your recipe looks really good! I am a new cook and found a recipe for yellow squash with onions, tomatoes, spices, and butter cooked in the oven in foil. When I opened up my foil packet I realized that the veggies were not roasted at all, but were merely steamed in their own juices (with no water) in the oven. Since then I have made this recipe several times, but instead of cooking in foil in the oven, I cook it in my microwave same ingredients as the foil packets without water in a pressure cooker (plastic for the microwave). It cooks in half the time (or less) and a lot less fuss than making foil packets. This is so much easier for me as I have a very small kitchen with very limited prep space.

I will have to give these another go as they did not turn out. For me, on the grill at 13 minutes was way too long. They were way over cooked and not edible. Also, you should mention in the recipe you popped them in the over on broil for a few minutes as without that step they will not look like your pictures (and that crispy/burnt cheese on top is what makes the pics!).
The amount of recipes I have bookmarked from you is ridiculous lol! Looking forward to trying this recipe next!
