Blueberry Blender Pancakes
Make breakfast even easier by making your batter in the blender! No whisk/bowl needed. Simply pour right from the blender!
Since I’ve been posting so many sheet pan/one pot dinner recipes, I figured we needed to show some love to breakfast meals.
Because if you really think about it, breakfast for dinner is probably one of the best meals anyway.
Especially when pancakes are involved.
But more specifically.
Blender pancakes. And bacon. And hash browns.
Wait. I digress.
Now when I say “blender pancakes”, I mean that the batter completely comes together in the blender.
Even the blueberries, which gives it a nice natural blue food dye.
Just be sure to have your maple syrup nearby. And that bacon-hash brown situation.
Blueberry Blender Pancakes
Ingredients
- 2 cups old fashioned oats
- 1 ½ cups blueberries, divided
- 1 cup milk
- ½ cup plain Greek yogurt
- 2 large eggs
- 1 banana
- Zest of 1 lemon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat oven to 200 degrees F and a nonstick griddle to 350 degrees F. Lightly coat a griddle or nonstick skillet with nonstick spray.
- Combine old fashioned oats, 1 cup blueberries, milk, yogurt, eggs, banana, lemon zest, baking powder, baking soda and salt in blender until smooth.
- Stir in remaining 1/2 cup blueberries.
- Working in batches, scoop 1/3 cup batter for each pancake and cook until bubbles appear on top and underside is nicely browned, about 2 minutes. Flip and cook pancakes on the other side, about 1-2 minutes longer; keep warm in oven.
- Serve immediately.

Any suggestions of what to substitute for bananas as I’m allergic. Was thinking Maybe unsweetened applesauce.

I was so excited to make these but they did not come out right at all. Too wet unfortunately. Followed the recipe to a T. A bit disappointed as the recipe sounded so delicious. They smell very good tho. Just not able to cook all the way through without me taking forever to finish baking the whole batch. Made them thinner, but to no fault.!
Unfortunately these did not work out for me. I followed the recipe exactly and they did not cook all the way through. The inside was still gooey.
It sounds like you didn’t cook the pancakes long enough!

Why am I heating the oven to 200? I don’t see it used in the recipe.
The pancakes are kept warm in the oven as indicated in step #4:

They were definitely delicious, but I thought it was a bit too runny. It was too gooey so I couldn’t flip it on the frying pan. I ended up adding 1/2 cup of flour to make it more sturdy. Served it with Agave syrup. 🙂

Hi! Thank you for the recipe.When I made these I used blackberries, because I didn’t have blueberries. The only thing I found weird, it was a bit gooey, I cooked them for a good amount of time on low setting and made them thin and it tasted like it was still raw. What do you think happened? Thank you
It’s hard to say – perhaps it was the blackberries that were substituted for the blueberries?
Have made these 3 times now and my kids LOVE them. Really good cold too. Only adjustment I make is I don’t add the whole blueberries back to the batter. I just sprinkle a few on top when I first put on the skillet. Thanks Chungah!
I found the batter a little too runny for my liking and made them difficult to manage on the griddle. They did taste great however and I think I will make again.

Is there any way to replace the bananas? I have an allergy, but they look amazing!
You can omit as needed.
Never tried using a blender for making pancakes before, guess I’ll try it !

Blueberry pancakes are the BEST!! Using the blender is a great idea and makes clean-up easy. The pictures look awesome, but I bet they tasted even better.
I’ll try them this weekend, think I’ll blender the oats by themselves first to make the texture finer. We only have frozen blueberries now, fresh are all gone sadly (Maine grows several thousand tons) so frozen it is with real maple syrup!
