Freezer Croissant Breakfast Sandwiches
Prep for the week with these make-ahead sandwiches for those busy mornings! Filling, delicious and microwavable!
It is day 2 here in Copenhagen! I have lost all feelings of my fingers and toes, and the color of my nose is worse than Rudolph.
But still, the architecture here is breathtakingly stunning. And the pastries! They’re pretty stinking amazing too. That’s all I’ve been eating – that and scrambled eggs and salmon.
And today we are headed to Tivoli Gardens. An amusement park right in the center of town with ebelskivers.
And a cup of varm gløgg in hand. It’s basically their version of mulled wine in 30-40 degree weather, which is the best kind of combination, really.
But what I really need with a glass of varm gløgg is this. Mini, adorable ham, egg and cheese croissant sandwiches because they’re just so cute and freezer-friendly.
Freezer Croissant Breakfast Sandwiches
Ingredients
- 1 tablespoon olive oil
- 4 large eggs, lightly beaten
- ¼ cup half and half
- Kosher salt and freshly ground black pepper, to taste
- 8 mini croissants, halved horizontally
- 4 ounces thinly sliced ham
- 4 slices cheddar cheese, halved
Instructions
- Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
- Fill croissants with eggs, ham and cheese to make 8 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
- To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
- Serve immediately.

I found a deal on hamburger and hot dog buns, so I will be using those. Mini croissants are not available around here until holidays. I’m thinking I should toast the buns before I fill and freeze them. What do you think? Anyone??
I was looking for a recipe for breakfast items that could be frozen. I want to make them for my grandson to have at his apartment. He doesn’t get many home cooked meals now. These will be good & hearty and a great way to start his day. Thanks! I think I’ll try the English Muffin next.

Celeste, you can bake or microwave until heated through completely after freezing.
How long and at what temp can I reheat in an oven?
Doris, you can reheat at 325 degrees F for 15-20 minutes or until completely heated through.
Really yummy! Do you think you could do this with an English muffin? Would you toast the muffin before assembling? These don’t need improvement, just wondering if it would work.

These look incredible! Can’t wait to try them. Do you think I could substitute almond milk for half and half or will that change the consistency? (I don’t have an allergy, but I’m hoping to make these for when I’m nursing so I’m trying to cut out dairy fornthat time frame!)

You can freeze up to 1 month.
Those sure don’t look like they were wrapped in a papertowel while frozen and then microwaved! LOL

You can heat them at 350-375 degrees F for 3-5 minutes, or until the croissants are toasted and the cheese has melted.

I recommend letting them cool down.

Just wondering, what is the reason for not mixing the eggs with the cream beforehand? Any special reason you add it in later?
