Zucchini noodles. Spaghetti sauce. And turkey meatballs.
That’s been my lunch all week.
With a hot bowl of this.
Because this LA rain will. not. stop.
But really.
These meal prep boxes are everything.
The zucchini noodles are a perfect stand-in for pasta.
And the meatballs keep me full without having the need to reach for a box of chocolate later!
Zucchini Noodles with Turkey Meatballs
Ingredients
- 1 pound 3 medium-sized zucchini, spiralized*
- 2 teaspoons salt
- 2 cups marinara sauce, homemade or store-bought
- ¼ cup freshly grated Parmesan cheese
For the meatballs
- 1 ½ pounds ground turkey
- ½ cup Panko
- ¼ cup freshly grated Parmesan cheese
- 2 large egg yolks
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried parsley
- ¼ teaspoon garlic powder
- ¼ teaspoon crushed red pepper flakes
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 400 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray.
- In a large bowl, combine ground turkey, Panko, Parmesan, egg yolks, oregano, basil, parsley, garlic powder and red pepper flakes; season with salt and pepper, to taste. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/2-to-2-inch meatballs, forming about 24 meatballs.
- Place meatballs onto the prepared baking dish and bake for 18-20 minutes, or until all sides are browned and meatballs are cooked through; set aside.
- Place zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes.
- In a large pot of boiling water, cook zucchini for 30 seconds to 1 minute; drain well.
- Divide zucchini into meal prep containers. Top with meatballs, marinara sauce and Parmesan.

Made this last night for my meal prep for the week. Just ate my lunch and AMAZING! Thank you for such a great recipe!
Can you make these without the parmesan cheese?
Yes.
Are these nutrition facts for each container, or is it because there are 6 containers? Is one container 300-something calories? thanks!
The nutritional information is for each serving.
How many meatballs per serving ?
About 3-4.
These were amazing. Need to make them again.
Are the calories based on per container?
Yes.
The flavors in this recipe are on POINT! So good – thanks for helping make dinner easy for me this week 🙂
Wow, those look delicious! Do you mind if I add them to my site that features zucchini noodle recipes from food bloggers around the web?
Yes, I just ask that the recipe is not republished in any manner. Thanks!
Delicious! I made this yesterday for lunches this week. Eating it now and it is wonderful! Thank you for another tasty recipe. My fussy son even likes the homemade sauce.
What do you use to figure out the Nutrition Facts? They’re incredibly helpful and it’s something I’d like to incorporate with other recipes as well. Thank you!
I use several different nutrition calculators to ensure I obtain similar results across the board.
Can you give me the macros on these meatballs
Nutritional information is actually provided only for select and new recipes at this time. However, if it is not available for a specific recipe, I recommend using free online resources at your discretion (you can Google “nutritional calculator”) to obtain such information. Hope that helps!
Zucchini I have noticed when I try to make zoodles get very watery and limp over time, any tips on how to prevent that? Yours in the picture looks nice green and not watery…HELP!
Here is a great tutorial to avoid watery zucchini noodles.

I made these for dinner this week, and you’re right — they’re DELICIOUS!!
Is there any way to make the meatballs without egg? This recipe is great but I have to feed someone with an egg allergy 🙁
You can omit and add a little bit of milk to act as a binder.
I use grounded flax seeds
Do these freeze ok? I love them, but don’t know if I could eat them 6 days in a row.
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
You can replace eggs and flax and water: http://minimalistbaker.com/how-to-make-a-flax-egg/
It’s an awesome substitution for vegans and egg allergy folks.
I’ve yet to try zoodles! I need to get on that bandwagon soon!

Looks delicious!
Where do the storage containers come from
You can purchase them from Amazon.com.
What do you do when you’re ready to use them? Do you heat in the microwave? For how long?
Yes, I reheat in the microwave until heated through, about 1-3 minutes.
