Korean Beef Bowl Meal Prep

Tastes like Korean BBQ in meal prep form and you can have it ALL WEEK LONG! Simply prep for the week and you’ll be set. EASY!
I’m baaaaaaack. And back on meal prep, unfortunately.
Well, it’s not unfortunate. I just miss the mardi gras colored dumplings. The churros with soft serve ice cream. The Hello Kitty dim sum. The 32cm ice cream cone.
But hey. These meal prep boxes. They come to an obvious close second.
They are such comfort food for me right now, except they are perfectly portioned with brown rice, sautéed garlic spinach, and some eggs for added protein.
It’s a full meal without getting you to overeat, or lead you to a food coma mid-afternoon.
And you know you can always swap out the ground beef for pork or chicken, or even crumbled tofu for a meatless version.
And I won’t be mad if you snuck in some veggies to the ground beef like carrots, bell peppers, zucchini, etc.
I won’t be mad at. all.
Korean Beef Bowl Meal Prep
Ingredients
- 1 cup brown rice
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups chopped spinach
Instructions
- In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in spinach until wilted, about 2-3 minutes; set aside.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- Place rice, eggs, spinach and ground beef mixture into meal prep containers, garnished with green onion and sesame seeds, if desired.

Hi– all these recipes look great, One question– why do only some of them show the nutrition info?
Hi Luanne, that’s because nutritional information is provided only for select recipes at this time. However, if it is not available for a specific recipe, we recommend using free online resources at your discretion (you can Google “nutritional calculator”) to obtain such information. Hope that helps!
We made this meal over the weekend for our meal prep this week. It is delicious and it was easy to make. Thank you!
Question, can we substitute the ground beef for like beef strips? If so, would we use the same amount of ingredients?
One more thing, do you by chance have the nutritional facts for it?
What a great idea! But unfortunately, without having tried this myself, I cannot answer with certainty. But if you get a chance to try it, please let me know how it turns out! Good luck! 🙂
Looks great and I’m planning this for next week’s lunch prep. So much better than eating at the office cafeteria!
One question, do you store the peeled eggs all week? Will they last?
Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps!
Oh my gosh!!! SO GOOD!!
I’m wanting to prep this this weekend! Looks amazing. How do you keep your rice from going stale after cooked and stored? I always seem to have a problem with this.
Sara, here are some great tips on how to store leftover rice. 🙂
Thank you! This was excellent! I want to post a pic but don’t see where to do it. I skipped the rice and put the meat (ground turkey) in a romaine cup. The extra juice from the meat I poured on the spinach. Will definitely make again.
That’s so great, Samantha! You cannot unfortunately upload images here, but you can always share and tag us on instagram/facebook/twitter. 🙂
This recipe is one of my favorites to come back to again and again. All of your sauces are amazing! Following the flavors in your recipes and working with what I have at home has actually given me a lot of confidence improvising while I cook. The sauce in this recipe and the sauce from your creamy chicken skillet are now staples for me. Thanks for all your hard work, Chungah! You’ve made me a better home cook!
Thanks so much, Ella!
Looks yummy! Can I omit the sriracha? Will it alter the taste? Does it make it spicy? My family does not like spicy food. 🙁
Yes, you can omit. 🙂
I just made it yesterday and it not make it spicy at all. You use so little. Its basically just for flavoring.
I tried this, taste was amazing.
THIS MEAL PREP IS SO GOOD! So for my first time I followed it exactly except doubled the spinach. Weight Watchers came out to 14 points using Lara’s Lean Ground Beef.
Next time, I am going to use less brown sugar and eliminate the olive oil when cooking the ground beef. That way I can get points down to 10.
But this recipe is so good for those who need a great easy meal prep or makes little substitutions/eliminations for a healthy one!
Used a 1 lb box of fresh spinach, a bit more than 4 cups, but otherwise followed recipe exactly – delish. Very satisfying lunch, definitely a repeat. Thank you!
Sounds great!
What brand of soy sauce do you use?
I use Kikkoman.
My husband loves and I do mean LOVES this dish. He’s asked me to make it 3 nights this week. It is delicious and I’m happy to make it again. For me its a bit too sweet so I will reduce the sugar. Just a personal preference. This dish is a huge win. Thanks for posting.
You’re more than welcome, Judy! It’s great to read you and your family enjoy it this much.
Are there nutrition facts?
How long is it safe to store/eat soft boiled eggs for? I would be a little concerned making this and having a sliced undercooked egg in the fridge all week… looks delicious and I would love to make it…. but I’m concerned about food safety….
As I am not an expert on food safety, I cannot really say with certainty – sorry! Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps, Erin!
They hold for a few days if you leave them in the shell. May not be the most convenient for meal prep, but they won’t last long at all if stored as pictured. I’d say either skip it, leave it shelled (and eat before the weeks up), hard boiled, or night before. Soft-boiled is not really the best for leaving sit.
This was an excellent recipe as is and my family loved it. It is quick and easy and tastes great. It would also be easy to adjust for personal tastes and nutritional needs. Thanks for sharing!
Hello! I love your meals! Thank you for all of your hard work at perfecting them!
I was wondering if you can use ground ginger in this recipe? If so, how much would you recommend?
Yes, absolutely. The ratio for dry to fresh spices is typically 1:3. Hope that helps!
Every recipe of yours that I have tried has been delicious. This one is scrumptious indeed! And great for meal prepping. Thank you.
This was my first venture into meal prep, and it was very successful. I was excited to eat dinner each night, and I didn’t think I could eat the same thing multiple nights in a row. The only thing I did differently was doubling the spinach portion of the recipe because I found that each serving had too little spinach. Everything tasted great, and I have been recommending this recipe to my mom and friends who like to cook.
Hi Chungah,
What kind of meal prep containers are you using and where did you get them? Are they durable and do they hold up well to reheating?
Thank you!
I found them on Amazon.com.

Thats a perfect meal I been looking for. Thanks you so much. Its so easy as well.
