Turkey Taco Salad Meal Prep

A much HEALTHIER take on Taco Tuesdays, except you are meal prepped for the entire week! Less calories and cheaper too!
If you’re a fan of tacos (and why wouldn’t you be?), you’re in for a real treat here.
Because we have a turkey taco salad to-go kit here.
It’s a healthier take on taco Tuesdays.
Except you’re prepped and set for skinny Taco Monday, Tuesday, Wednesday, Thursday and Friday.
What’s so great about this meal prep is that your greens and premium toppings are separated into their own little containers.
So we have no sogginess, no mush, no nothing.
Just a fresh taco salad literally ready at your fingertips!
And there’s no dressing needed here either.
Between the shredded Mexican blend cheese, pico de gallo, Greek yogurt, and lime juice, you have plenty of goods here.
If, however, you are feeling a little bit on the wild side, throw on some guacamole or avocado slices right before serving.
Turkey Taco Salad Meal Prep
Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds ground turkey*
- 1 1.25-ounce package taco seasoning
- 6 cups shredded romaine lettuce
- ½ cup pico de gallo, homemade or store-bought
- 6 tablespoons Greek yogurt
- 6 tablespoons shredded Mexican blend cheese
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground turkey and cook until the turkey has browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; stir in taco seasoning. Drain excess fat.
- Place romaine lettuce into sandwich bags.
- Place pico de gallo, Greek yogurt and cheese into 2-ounce jello shot cups with lids..
- Place turkey, romaine lettuce, pico de gallo, Greek yogurt, cheese and lime into meal prep containers.

I actually did not use measuring cups – I divided evenly (or as evenly as I could!) into 6 meal prep containers. Hope that helps!
Hey just wondering can this meal be frozen and microwaved later on to eat??? If so what can be frozen and what can not ??
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
I made this today and it was absolutely delish! I made guacamole and used low fat sour cream instead of yogurt. I didn’t use individualized containers. The only thing that I separated was the ground turkey and pico sauce. Everything else I used 1 reusable container and meticulously placed it in my lunch bag so to keep the ingredients separated until I was ready to eat it.
Absolutely loved this meal prep! So easy and yummy (as always)! Took this to work and had to share this recipe with everyone!! Thanks for another great recipe!

Hi Chungah! LOOOOVE the meal prep ideas- please keep them coming! Quick question- are you able to put the lids of your meal prep containers on securely WITH those 2 oz condiment cups? Mine wouldn’t- but maybe I bought the wrong kind?

Made these for this week! I added 1 bag of steamfresh brown rice to the turkey meat, and a few green olives. Hubby will take his with a snack-size fritos bag too. 🙂 YUM!
Although i love your recipes i feel sad seeing all that plastic going into a mealprep (esp bc its the type you are unlikely to reuse). You could just use reusable dressing containers (i think tupperware has some?) Anf the salad if you add it in the morning should be fine or put in seperate (reusable) container. If you consider how often we eat lunch/dinner (daily lol) its worth to sacrifice maybe a TINY bit of convenience for mother nature. And if someone replies i can just do it like that myself, its not forbidden: yes i can, thanks, but its always lovely if influential bloggers set the best possible example. Dont take my reply the wrong way bc in general i love what you do and hope you keep up the good work!

I am pretty sure she was talking about the plastic bag.
I reuse my plastic bags. I bring them home from work, rinse them out, hang them to dry with clothes pins in the kitchen, and re-use them for lunches.

I did the recipe builder on WW using sour cream and only 1 lb of turkey for 5 servings instead of 6. It came out to 8 points/salad, 40 points for the whole thing.

I was hoping a homemade version of the taco seasoning would be provided.
We are trying to limit our sodium intake.
If you Google for reduced or sodium free taco seasoning, a plethora of recipes are available. There are quite a few packets in my local grocery store that are also reduced/low/no sodium. No reason to provide a recipe when it is readily available.
Look on pinterest . Several good recipes there that I have used
