Skillet Lemon Dill Chicken Thighs

I present to you the speediest chicken dinner. Aka, a stress-free weeknight meal made in 30 min from start to finish.
I’m dead serious. I have no tricks up my sleeve on this one. It really is the quickest chicken dinner anyone can ask for.
All you need is some boneless, skinless chicken thighs (chicken breasts will also work just fine here). Give them a good sear until they are fully cooked through. From there, you’ll use all the pan drippings with some flour, chicken stock, lemon juice and fresh dill to create the creamiest gravy ever.
This gravy/cream sauce makes this dish SO SO BOMB.
Serve with some rice, serve with a salad, serve with some potatoes, serve alone. You do you. I personally eat it straight out of the skillet. #weddingdiet
Skillet Lemon Dill Chicken Thighs
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- Kosher salt and freshly ground black pepper, to taste
- 5 ½ tablespoons all-purpose flour, divided
- 1 tablespoon canola oil
- 1 tablespoon unsalted butter
- 1 cup chicken stock
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh dill
Instructions
- Season chicken with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge chicken in 4 tablespoons flour until evenly coated.
- Heat canola oil and butter in a large cast iron skillet over medium heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side; set aside. Reduce heat to medium low.
- Whisk in remaining 1 1/2 tablespoons flour until lightly browned, about 1 minute.
- Gradually whisk in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 3 minutes. Stir in dill; season with salt and pepper, to taste. Return chicken to the skillet.
- Serve immediately.

Super easy and delicious! Added a bit of half and half to the sauce. Didn’t have chicken stock, so I substituted chicken bouillon. Served with a spot of parm cheese and garlic parm butter-sautéed spinach on the side!

Delicious! I love lemon chicken of any kind but this was truly easy. I did make more than twice the sauce and added about a half cup of pinot grigio too. Same amount of dill though I’m more of an eyeball cook and go by taste. Served with basmati rice since I ran out of jasmine. I will make make this forever. Thank you~xx
how would you do a lemon n dill sauce for fish?
would this recipe work adding seabass or bassa or prawns or squid or octopus or mixed fish n seafood instead of chicken

Canola is not an articially created oil by ANYONE. It’s the ‘nice’onsumer friendly name for rapeseed oil.Canada huge exporter.
I believe grape seed oil is poisonous. Has to be modified to be consumed by humans.

Absolutely delish! I love the idea of adding capers. Didn’t have fresh dill so used 2 teaspoons of dried. It was okay, but I’m going out and getting some dill plants for next time.
This was super yummy! I had ordered bone-in skin-on thighs and I got boneless skinless thighs. Searched here and found this recipe! I happened to already have fresh dill and lemons on hand. The only thing I changed was I added a couple tablespoons of capers that I rinsed so they weren’t too salty. I love that briny taste with lemon butter sauces.

I seared the thighs only, added wine and put broccoli in with the chicken to cook: it made for a great one pan meal. My husband and I loved it!

This…. it’s so simple and so amazing! I have a very serious allergy to onion and garlic and it’s difficult to adapt garlic in many recipes (also gluten free), but I don’t have to with this and it is so delicious we can’t stop eating it. We found this recipe last year as my fiancé got out of the car and brushed against the dill growing in my herb garden. He said “That dill smelled soamazing let’s make something with it tonight!” This recipe is perfect on so many levels for us. Thank you!
