Avocado Corn Salsa
Tastes just like Chipotle’s corn salsa but it’s really a million times better!

It’s bad you guys. I’ll skimp on the main dish just so I have more of a calorie allowance for snacks later on.
Yeah, like I said, I’m a pathological snacker.
Fortunate for me, I just discovered Green Giant‘s very giant surprise. And no, it doesn’t come from the freezer aisle.
They have these new veggie snack chips, which are completely addicting. They have Roasted Veggie Tortilla Chips in Zesty Cheddar Flavor and it’s made with real vegetables, has 17 grams of whole grain per serving and it’s naturally flavored. They also have Multigrain Sweet Potato Chips in Sea Salt Flavor, my absolute favorite, and it’s made with real sweet potatoes, has 14 grams of whole grain per serving and the best part: it contains 40 percent less fat than regular potato chips!
So when I’m snacking the night away, especially in the 10PM-2AM zone, I don’t have to feel guilty about it. And I can feel ever better about it when I eat it with this avocado corn salsa. With just enough spiciness and a bit of tanginess, I could seriously snack on this all day, everyday!
Avocado Corn Salsa
Ingredients
- 2 cups canned corn kernels, drained
- 1 jalapeño, seeded and diced
- ¼ cup diced red onion
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon sugar
- ¼ teaspoon salt
- 1 avocado, halved, seeded, peeled and diced
Instructions
- In a large bowl, combine corn, jalapeño, red onion cilantro, lime juice, sugar and salt. Stir in avocado.
- Serve immediately.

Excellent salsa. I used it as a side to bbq hamburgers and it was perfect. Also good two days later. The avocado didn’t brown but did soften some. Thank you
Totally delicious!! We made this recipe tonight and loved it! For two of us, we used two ears of roasted corn, 1 whole avocado, 1/2 red onion, 1 jalapeño from our garden plus the sugar, salt and lime juice. We had it with grilled salmon and ate the entire recipe with no leftovers! So so excellent! We will definitely make this recipe again!
This sounds awesome… but I have an issue with jalapeños… is there a mild spice I can use in place of them for the flavor “WITHOUT”(sorry not trying to yell at anyone) the heat? I really miss salsa because of my inability to handle the heat that is in most of the ones a person can buy.
You can just omit the jalapenos, Teresa. 🙂
I grow an jalapeno that I bought from Kaw Valley called (Fool Ya Jalapeno) flavor without the heat. Excellent for substituting.
Should i use regular canned corn or swet canned corn?

I don’t know about the sugar, corn should be sweet enough. But this is crack in its purest form

Quick corn question….just because it’s in season right now, if I used fresh would I just have to add extra salt to the recipe? I for sure know you usually make it with canned so don’t at all mean to alter it….other than at the moment fresh is on hand so figured I’d at least ask. Thanks so much!
Sabrina, thank you for trying my recipes! You can certainly use fresh corn but I would add salt, to taste, because you may not even need it!
Oh wow. Nevermind on the rice vinegar thing. Haha I accidentally added it the first time I made it. I was making a lot of things in my kitchen that day and was supposed to add it to another recipe. Ooops! I guess no one noticed the strange vinegar flavor! Glad I’ll be making it the right way this time! Thanks again!
I love this! I’ve made it several times already. I like adding an extra avocado to this and a pinch more lime juice. It was enough lime juice that it was still good 2 days later.
This is such a yummy and easy salsa. I’ve made it several times now and its always devoured. I did have a question though. Last time I made this, I swear it called for rice vinegar. Am I dreaming this? If am remembering this correctly, how much do you use? Thanks again for the great recipe!

I have made this twice in the past four days!!!! Didn’t use it as a “dip”, but rather as a side dish on one occasion and put big scoops on top of chopped lettuce for a salad the second time!!! Love this, and so easy!!! Golly, if I serve it as an “appetizer”, we might have to buy an avocado farm!!!!
Don’t be fooled by the “Healthy” veggie snacks they are NOT NON GMO…ergo a big fat bag of cancer. I’m sure they aren’t that hard to make at home using organic ingredients that would be a good project for you to try recreating store bought GMO chips and snacks using healthy organic ingredients <3 Love your site
I grew up eating this. Omg sooo good! I always add seeded and diced Roma tomatoes. Maybe 3? As to making it and serving right away, don’t!! Serve at least 8hrs after making. Right before serving, then add the avocados! It’s a 1000x’s better the next day, I promise!!
Can you make this salsa a day ahead? it would be served the next morning for a brunch, just wondering. Thank You!!
You can certainly give it a try but I worry that the avocado might brown if made too far in advance.
I have not had any problems with the avocado browning because of the lime juice and covering it tightly.
