Zaru soba is a very popular dish in Korea, especially in the summertime. It’s a simple buckwheat noodle dish with an easy chilled dipping sauce with some grated radish, green onions, and wasabi to give it that nice refreshing spicy kick to it. There’s this one place near my parent’s apartment in Korea that has the absolute best zaru soba I’ve ever had in my life. On my last 10-day trip to Korea, my mom treated me out to this place at least 4 times! The homemade version isn’t as good as this place but it still fulfills my zaru soba cravings in just 10 minutes.

Zaru Soba

Yields 2 servings

  • 6 ounces buckwheat noodles
  • 2 radishes, peeled
  • 2 green onions, chopped
  • Wasabi (Japanese horseradish), to taste
  • 1/4 cup Soba noodle soup base, or more to taste

In a large pot of boiling water, cook noodles according to package instructions. Rinse under cold water and drain; set aside.

While the noodles are cooking, grate one radish in each dipping bowl. Squeeze and drain excess moisture.

In the same dipping bowl, add a handful of green onions and wasabi, to taste.

Add the Soba noodle soup base and stir to combine.

Serve dipping sauce with noodles.
