One Pot Cheeseburger Casserole

All the flavors of a cheeseburger in cheesy pasta form made in one skillet in less than 30 minutes – even the pasta gets cooked right in the pan!
With a very cloudy day today, I decided to take the day off and unplug from everything.
I forget how refreshing it is to take a break from time to time, especially when you’re buried in your own work 24/7. The perks of being your own boss, right?
But now that my lazy day is over, I really need to share this pasta skillet. See, after I made that one pot andouille sausage skillet pasta, I’ve been somewhat addicted to these easy one pot meals. After all, I’d do anything for less dirty dishes in the sink!
Now if you’re a cheeseburger lover like me, you’ll love this pasta skillet. It’s all the flavors of a cheeseburger in pasta form with crumbled ground beef, melted cheddar cheese and fresh tomatoes. You can even go further and top these with your favorite burger toppings like pickled jalapeños or crumbled bacon – the sky’s the limit!
One Pot Cheeseburger Casserole
Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds ground beef
- 1 onion, diced
- Kosher salt and freshly ground black pepper, to taste
- 1 (28-ounce) can diced tomatoes, undrained
- 1 (8-ounce) can tomato sauce
- 2 cups chicken broth
- ¼ cup ketchup
- 1 tablespoon Dijon mustard
- 1 pound rotini pasta
- 2 cups shredded cheddar cheese
- 1 Roma tomato, diced
- 2 green onions, sliced
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and onion and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat.
- Stir in tomatoes, tomato sauce, chicken broth, ketchup, mustard, pasta and 2 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes.
- Serve immediately, garnished with tomato and green onions, if desired.

I veganized mine, used beyond meat, omitted cheese and it was AMAZING!!!
Loved it! On the table in 25 minutes. Added more cheese (because – cheese!) and stirred it in. Family devoured the leftovers.

One of my family’s favorite dishes. We normally double this and use ground turkey or a combination of turkey/beef. Sometimes I give it another squeeze of Dijon mustard for a little but of extra flavor. It always balances well with the rest of the flavors!
Everyone loved it even my 2 fussy eaters, the comments say it was too soupy but I cooked it it without putting a lid on and it came out just perfect xxx so maybe try that next time xxx otherwise I followed the recipe, definitely one of my favourite dishes to make ty xxx

Damn, this was delicious. I used ditalini pasta and skipped the water, and I didn’t have any ketchup. I dished it up with a big pinch of shredded cheddar and some olives. Amazing and easy recipe, thank you!
This was very tasty. I did not have tomato sauce so I used 1 small can of tomato paste. I added chopped dill pickles and yellow mustard with the cheese.
Could you make this with veggie noodles or riced cauliflower?
Made this for dinner tonight and it was fantastic! Based on other reviews, I did decide to leave out the water and the consistency was perfect. I also stirred the cheese throughout to balance the taste, but I completely understand leaving the cheese on top gives you more of a cheeseburger feel. We love pickles, so I topped with those. We’ll definitely keep this in the easy dinner rotation, thanks for a tasty and quick recipe that will make great leftovers!

This was very good, but not sure why it was called a casserole, it was more like soup. Thought it would be thicker, but it was soupy. Will either put less water or omit it altogether next time.
Great recipe! I needed to use up some leftover grilled hamburgers, so I used this recipe as a starting point. I’ll list some of my modifications for anyone who’s interested. 🙂
-I added 2 finely minced zucchini in with the onion to add an extra dose of veggies.
-I used beef bone broth instead of chicken.
-I used elbow pasta.
-I used a dutch oven and cooked it uncovered for about 10 minutes, stirring it every few minutes. The liquid was perfect.

Really good, but will omit the 2 cups of water as it was too runny for us.

Sorry I should have read all the reviews. I see now that it is 4 cups total liquids!
