Garlic Parmesan Roasted Shrimp
The easiest roasted shrimp cocktail ever made with just 5 min prep. Yes, it’s just that easy!
If you’re ever in need of a quick and easy appetizer, look no further because this can be made in 5 min. Yes. 5 min.
Although if your shrimp isn’t already peeled, it may take a little longer – say 12 minutes – but still. Once they are peeled and ready to go, you are set! All you need is olive oil, garlic, freshly grated Parmesan and some pantry spices. That’s it.
Once they’ve been roasted to that glorious orange perfection, go ahead and add that squeeze of lemon juice. Easy peasy, right?
Garlic Parmesan Roasted Shrimp
Ingredients
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
- Juice of 1 lemon
- 2 tablespoons chopped parsley leaves, for garnish
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, garlic, oregano, basil and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Stir in lemon juice.
- Serve immediately, garnished with parsley, if desired.

You say to gently toss the seasonings but do you mean toss the shrimp in the seasoning but then you say to lay them on the cooking sheet I don’t understand when you add the seasonings

My mother and I found your recipe and were excited to try it. However, my stepdad won’t eat shrimp. My mom decided to add two small cod loins to the dish, he loved them! Just made this (minus the lemon because I didn’t have any) and they turned out AMAZING! I decided to add some steamed asparagus on the side and grated fresh parmesan over it. It was the perfect compliment. Definitely on my weekly dinner rotation!

Recipe needs to state defrost shrimp first for dummies like myself. Bc I just did everything and read in comments shrimp have to be defrosted. So I had to start all over. Ugh

Are the shrimp thawed or frozen when you bake them? I looked all in the recipe and read the comments looking for an answer. I have some frozen raw shrimp in the freezer.

Wow, these are fabulous and easy! I have celiac disease and have to avoid the traditional battered/breaded shrimp. These are better than any breaded shrimp I ever ate in my pre-celiac life! I’ve been trying to incorporate more fish and seafood into my diet and this is a real winner. I plan to try the same type of preparation with tilapia or cod. 5 stars.
Can this be prepared in advanced and reheated later? For example, in a meal prep situation?
Lauren, this is really best when served immediately as reheating can cause the shrimp to overcook, resulting in a tough/chewy texture.
Do you think if I undercooked them originally they would turn out okay when reheated?
It’s really hard to say – I’m personally not a fan of reheating shrimp, but as always, please use your best judgment.

I made this today. It was absolutely wonderful! Delicious! I made 2 lbs of it as a main dish to go with a tomato, cucumber, onion, carrot & lettuce salad. So good! I will DEFINITELY be making this again.

It is best to use olive oil to obtain the best results possible. Using a substitution may result in a mediocre outcome, but if substitutions must be made, please use your best judgment.
I just made this after coming home from a tiring day at work. I had to start the rice cooker first because by the time the rice was done the rest of this fabulous dinner was ready to go. parmesan before or after cooking?
As indicated in the recipe, the Parmesan is sprinkled prior to cooking:
Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, garlic, oregano, basil and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
The description before the recipe says to sprinkle the Parmesan on after the shrimp are roasted. That was confusing for me also.

Kathleen, it is best to use uncooked shrimp. By using precooked shrimp, you will run the risk of overcooking the shrimp, yielding a rough, rubbery texture.
