Now you can sleep in and eat a filling and hearty breakfast ALL WEEK LONG! Eggs, bacon or sausage, roasted potatoes and broccoli!
I’m finally home.
And I’m back to my old self with my favorite routine of meal prep.
Although I wouldn’t mind more of those pineapple buns for breakfast.
Actually.
I’d rather do the pineapple bun meal prep.
But.
For now, this will do.
The All-American breakfast diet.
So you can skip the sugary breakfast bars.
Don’t worry.
You can still sleep in.
You’ll just have eggs, bacon, potatoes and broccoli waiting for you.
You can even change it up to have a few sausage boxes as well.
Or use sweet potatoes instead.
The combinations are endless.
Now if we can only add a side of that pineapple bread…
Breakfast Meal Prep
Ingredients
- 12 ounces russet potatoes, diced*
- 3 tablespoons olive oil, divided
- 2 cloves garlic, minced
- ½ teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 8 large eggs, lightly beaten
- ¼ cup reduced fat shredded Mexican blend cheese
- 4 slices bacon*
- 12 ounces broccoli florets, about 2-3 cups
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto the prepared baking sheet. Add 1 tablespoon olive oil, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 25-30 minutes, or until golden brown and crisp; set aside.
- Heat remaining 2 tablespoons olive oil in a large skillet over medium high heat. Add eggs, and cook, stirring occasionally, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes. Top with cheese; set aside.
- Add bacon to the skillet and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- Place broccoli florets into a steamer or colander set over a pan of boiling water. Cover and steam for 5 mins, or until cooked through and vibrant green.
- Place potatoes, eggs, bacon and broccoli into meal prep containers.

Did you make this recipe?
Tag @damn_delicious on Instagram and hashtag it #damndelicious!
What brand of sausage do you use for the recipe in the photo? It looks so good!!! I love all your recipes!!!
Needs a “JUMP TO RECIPE” button!
Or you can scroll all the way down to the recipe. 🙂
My husband and I really don’t like broccoli, I have been trying to think of an alternative but have had no luck. Any ideas on what I can substitute?
April, you can substitute green beans or snap peas or omit altogether. 🙂
I think bell peppers would be awesome for breakfast!
I find baby spinach very easy to prep and heat. Also, goes great with all in this dish!
How do you reheat the meal in the morning?
I recommend reheating in the microwave.
I’m new to this.. at the end it says place in meal prep containers and in the nutrition facts it says servings per container is 4? I’m confused.. Help.
The nutritional information is for each individual serving.
Can you freeze these and reheat
What a great idea! But unfortunately, without having tried this myself, I cannot answer with certainty. As always, please use your best judgment when making substitutions and modifications.
Thanks for this idea…I never thought of prepping breakfast. I’m always just grabbing a bite at work, but now I think this would be much healthier than a bacon burrito from work.
Yes, it’s such an easy way to start your day!
How many gram or ounces of egg, bacon, broccoli, and potato for each container???
Technically 3 ounces of potatoes, 3 ounces of broccoli, one slice of bacon and 2 scrambled eggs. However, weight and amount of each might change when cooking, so it’s not an exact science. However, the recipe yields 4 servings, so my suggestion would be to divide what you have as evenly as possible. I hope that helps!
Is this really only an estimated 360 calories per meal? How is that possible? Yum! Totally making this next week.
I am so sorry for all the questions – I have never done anything meal prep before. Do I need to wait a certain amount of time to put the assembled containers with the hot ingredients in the fridge, or no? If so, how long? Thanks 🙂
Yes, please let it cool completely prior to refrigerating.
This looks like JUST what I need! I LOVE these breakfast foods and have good intentions of making them, only to run out of time to do it in the morning. If I only wanted to make say 2 or 3 of these meals for myself, how would I adjust the ingredients?
I just see now that this recipe looks like it yields 4 containers (aka four meals). So to do two meals, I would just cut the recipe in half, right?
Yes, that is correct.
Stupid question, so does each of the 4 containers yield 360cals?
Yes, that is correct.
Can you frezze these meals ?
By the way i love all of your healthy meal preps
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
Hi there! Love your recipes! What resource do you use to create your nutritional food labels? I’ve heard of recipe pal, but like how yours look just like the boxes of everyday foods that we eat. Thanks!
Hi Ashley, our nutritionist Pam does the calculations and then we use a plug-in for the website, so the numbers show up as your traditional label. But there are resources out there to create your own label for free, if that’s what you’re looking for.
Keep up the meal prep posts! LOVE IT!!! And meal prep for breakfast is genius! Thank you for this. Can’t wait to see more meal prep recipes. 🙂
Can you post more ideas for meal prep?
Possibly several ideas for a ketogenic diet?
OR ideas for calorie restrictive diet? below 2000 calories, below 2500 calories, 5000 calorie diet divided between 5 meals a day, etc…..Many people who meal prep are fitness addicts who are focused on nutrition and counting their calorie intake throughout the day everyday. coming up with new and fresh ideas to eat while having to be aware of what you’re eating is very time consuming. I hope you are able to help.
Thanks
How many calories does this meal entail? Or do you have nutritional facts in general on it.
Nutritional information is provided only for select and new recipes at this time. However, if it is not available for a specific recipe, I recommend using free online resources at your discretion (you can Google “nutritional calculator”) to obtain such information. Hope that helps!
This looks delicious for a breakfast!
Roasted potatos having some cheese within would be damndelicious 🙂
Don’t know where I’ve been, but never heard of “meal prep” before. How long has this been trending? This sounds great.
This meal looks amazing but I’d rather have it for lunch or dinner. Usually, my breakfast consists of coffee and a banana.
That works too! 🙂
This is my kind of breakfast. I can eat this all week. Thank you for sharing this, Chungah. I’m going try this for myself.
So if this makes 4 servings, each serving gets one slice of bacon/sausage? Your pictures look like they have more.
Yes, each box can have one slice of bacon/sausage but you can add more as needed.
But then how does that change for the nutrition label if more bacon or sausage is added?
Emma, nutritional information is actually provided only for select and new recipes at this time. However, if you would like to make changes to a specific recipe, I recommend using free online resources at your discretion (you can Google “nutritional calculator”) to obtain such information. Hope that helps!
This is such a great idea! I love having quick but diverse breakfasts throughout the week, but hate the morning prep work.
Breakfast is my favorite! Most mornings I cook egg whites with different ingredients thrown in but there are days when I don’t have time. This would be perfect!
I love this idea, but I would cut a few minutes by putting the bacon in the oven at the same time as the potatoes – cuts down on the mess of cooking bacon on the stove top!
Ok, please help a rookie out…
If I make this exactly as the recipe states, how many days in the refrigerator before they go bad? Also, approximately how long do I microwave them for?
I keep these in the fridge for 3-4 days, and I reheat for 1-2 minutes, or until heated through. But I am not an expert on food safety. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.
I always prep lunch, but I never prep breakfast! I really should start because I am always in a rush in the morning…

Will be thankful when this food prep trend ends.
Trend or not, meal prep is helpful for many individuals (myself included) to save time and money, and to ensure healthier eating habits rather than eating out, ordering take-out or hitting the fast food drive thru lane.
Well – as they say – to each their own! 🙂
But I’m with you – I LOVE this food prep trend. It is the ultimate in efficiency!
Keep up the good work!
Keep it up! I love these ideas. I’ve done your turkey bacon brussel sprouts egg one several times.
That sounds SO good!
The Meal Prep posts are great, keep doing them please!
My family and I love your meal preps! We save so much time and money, and your food is always delicious. Thank you!
Also much easier and time saving to cook one larger batch and have one set of pots, pans, etc. to clean up than one set each day. This totally makes sense to me. But, I can see how you could prefer to wash all the pans everyday; I guess.
We all know breakfast is the most important meal of the day! Yet many people either lack a good breakfast or even skip breakfast. Thank you for sharing (:
How long can the cooked eggs stay in the refrigerator or freezer?
Here is a chart regarding egg storage/safety for your reference:
https://www.foodsafety.gov/keep/charts/eggstorage.html.
I mean, it’s ok to eat these for lunch too, right??
100%. Dinner too! 🙂
Sounds wonderful. Making this soon. Best part? I’d have never thought of broccoli for breakfast but just think of all the treats I could get away with later in the day because, well, I did have broccali for breakfast.
Can this be freezed ? How do you reheat this, in microwaves ?
I recommend storing in the refrigerator and reheating in the microwave.
I started buying glass containers. They’re easy to store, easy to clean, more sanitary, microwavable and can be used to bake with. I recommend it to anyone who likes to meal prep.
I agree. Dont go to great lengths to be healthy then microwave in plastic? Yuck
Then feel free to eat these cold! 🙂
I assume then that these get zapped in the microwave for consuming. For how long do you recommend?
About 1-2 minutes.
Oh yes ! If I make one portion more, it would serve me just fine for my office brunch; needless to say : photos are heavenly good and inviting. Thank you so much !
