Tropical Smoothie with Tapioca Pearls
Tapioca pearls add an Asian flair to this tropical smoothie with fresh mango, banana, pineapple, coconut milk and Greek yogurt in this healthy breakfast treat!
When Jason and I hit our one year anniversary in 2010, we went on a 10-day trip to Costa Rica. This trip involved ziplining through the Monteverde cloud forest, white water river rafting through Río Pacuare and paddle boating around the gorgeous Arenal Volcano. But even with all of these adventurous activities, my favorite part about the trip was actually the tropical fruits.
As we traveled throughout 4 different cities in Costa Rica, we were able to sample an incredible amount of fresh tropical produce, but I particularly enjoyed their mangoes and pineapple. It was the kind of freshness I have never ever experienced. I honestly wanted to bring boxes and boxes of produce back home but with customs, we sadly had to come back empty-handed.
I daydream about the fruits that I had out there, overlooking the Arenal Volcano, but until Jason and I make it out there again, I can imagine that volcano scenery again with this tropical smoothie. Loaded with bananas, pineapple, mango, coconut milk and tapioca pearls, I can stay in paradise for as long as I’d like!

Did you use canned unsweetened coconut milk or the refrigerated kind in a carton?
I used refrigerated coconut milk.
