Kale Cobb Salad
A colorful, hearty and power-packed salad with the creamiest poppy seed dressing, loaded with berries, feta, avocado and almond!

This epic cobb salad.

This salad loaded with perfectly arranged rows of toppings.

Kale Cobb Salad
Ingredients
- 6 cups chopped kale
- 2 avocados, halved, peeled, seeded and diced
- 2 cup strawberries, halved
- ½ cup Fisher Nuts Whole Natural Almonds
- ½ cup blackberries
- ⅓ cup blueberries
- ⅓ cup crumbled feta cheese
For the poppy seed dressing
- ⅓ cup mayonnaise
- ¼ cup milk
- 2 tablespoons sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon poppy seeds
Instructions
- To make the poppy seed dressing, whisk together mayonnaise, milk, sugar, apple cider vinegar and poppy seeds in a small bowl; set aside.
- To assemble the salad, place kale in a large bowl; top with arranged rows of avocados, strawberries, almonds, blackberries, blueberries and feta.
- Serve immediately with poppy seed dressing.

For our summer entertaining we usually keep it easy and grill. Then everyone gets to enjoy being outside and no one is slaving over the stove. Thanks for the giveaway!
I enjoy entertaining anytime I can. I love to have barbecues in the summer. It’s a casual way to entertain & I think people are more relaxed when they are comfortable. In order to make entertains more affordable for everyone I allow the guests to bring something if they would like.
I like having a few people over and entertaining on the back porch. Lots of fruit, light salads, drinks, popsicles for the kids.
This salad looks amazing. I make something very similar, but use romaine and spinach. Love kale, I’ll be making this recipe asap. As for entertaining this summer, we love getting together with friends and making easy, make-ahead recipes using lots of veggies from our garden – salads, corn dips, homemade pickles, relishes, salsas, tomato sandwiches.
Not a fan of kale can I use romaine or spinch or maybe a combination or the two?

I like to impress my guests with my clam shucking skills. Nothing says summer like clams on the halfshell.
Salad looks fantastic. Don’t really have any summer entertaining plans just some get togethers with the family — grilling and homemade ice cream.
This looks amazing – I always preassign my plates with the name of the item on a post it note.
Use lots of fresh in season produce.
Plenty of backyard barbecues with garden fresh vegetables, homemade ice cream, and gallons of sweet iced tea.
I’m going to make a big batch of vegetarian lasagna, daughters-in-law are covering apps, sides, and desserts
I plan on incorporating lots of blackberries into everything I make this summer – from blackberry syrup for blackberry ice cream sodas to blackberry crisp. They’re free for the picking where I live, and they’re oh so delicious!
My favorite Summer entertaining idea is something my Mother taught me to do. She used to make Hobo packets for my brother and I when we were growing up and now I make them for my family.
During the summer we love to bbq and go to the beach. Your salad would be perfect for both!
I try eat fresh and cool meals in the summer especially due to the humidity! This salad looks wonderful especially with the berries!
