I’m so excited to meet you and thrilled to work with Damn Delicious on this exciting expansion. I hope you enjoy making these recipes as much as I do creating them (and eating them, of course). So let’s get right to it!
Now sometimes we all need a healthy breakfast option. Just once in a while. I am definitely not against a doughnut, or three.
But breakfast is the most important meal of the day, and having a well balanced breakfast has been prove to stabilize energy levels preventing that mid-morning crash, cut sugar cravings and help cut additional snacking that can lead to unwanted weight gain.
So for my very first recipe, I’m bringing you one of my absolute favorites. Protein waffles. I promise you – they don’t taste any different to a regular waffle. Best of all, these are packed full of protein and good carbohydrates without the addition of protein powder. Instead, the eggs and cottage cheese give you all the protein you need.
You can easily double, triple or quadruple the recipe, and pretty much do anything with them. Freeze them for later, take them on the go, pack them in lunch boxes for the kids, or use them for a fun Sunday brunch with friends and family. These waffles are also practically effortless with the use of a blender. From there, simply pour the batter into the waffle maker. See, there’s only one blender to clean now.

Healthy Protein Waffles
Ingredients
- 6 large eggs
- 2 cups cottage cheese
- 2 cups old fashioned oats
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Combine eggs, cottage cheese, oats, vanilla and salt in blender until smooth.
- Pour a scant 1/2 cup of the egg mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes.
- Serve immediately.

Do these taste fairly egg-y? What’s the texture like? are there enough oats that they don’t come out with a rubbery texture? I’ve tried high protein waffles/pancakes before and they’re always both eggy and rubbery! -_-

I just made these for breakfast and they were awesome! My husband said he wants them everyday 🙂 Just curious, the nutrition facts say “serving size 4″…so that means 4 whole standard sized waffles are 276 calories total? I would have thought a typical serving would be about 2 waffles. Thanks!
One serving size corresponding to the nutritional information is for one waffle.
I just made these and it tasted a little sour..I’m guessing it’s from the cottage cheese. Is it supposed to have a slightly sour taste? :/
It should not have a distinct sour taste per se. Did you follow the recipe exactly as written without any substitutions?
But beware of the maple syrup you pour on the waffles. Per the nutrition label, 1/4 cup… merely a 1/4 cup mind you… contains 47 grams of sugar, which is the equivalent of almost 12 teaspoons of sugar.
I’m pretty sure all that syrup is for the benefit of a beautiful photo.
How many waffles does this recipe make?
About 4 standard-sized waffles.
If it only makes 4 then why does the nutritional stats say serves 6?
The recipe makes 6.
I am so excited to try this! Waffles are my favorite breakfast food to make at home, but I never found a health recipe that was also tasty. These look great, and are actually easier than my go-to recipe.

May I use egg beaters? Pecans? Blueberries? (Please don’t say “Yes, absolutely”. or I’ll think I’m talking to a robot!).
Yes, absolutely. You can add pecans and blueberries. See, not a robot here :). I have also added lemon zest, nutmeg, and other types of berries. The possibilities are endless. As for egg beaters – unfortunately, I do not have much experience using this ingredient so I cannot answer with certainty. As always, please use your best judgment regarding modifications and substitutions to suit your preferences.

I would imagine that the steel cut oats are too hard to be thrown directly into the blender. Perhaps try soaking them with the cottage cheese overnight? That might help to soften them up sufficiently.

It’s honestly a bit hard to say without seeing which waffle maker it is as size can vary quite a bit.

Yes, absolutely.
We loved this recipe we made pancakes and I was ableto get 12 pancakes using a measured quarter cup. They were nice in size and took no time in the skillet. Best recipe I’ve found so far and that is searching for 2 years. My husband couldn’t believe they had cottage cheese on them. Thank you for another recipe to add to my collection!

These were a huge fail for me. They stuck in my waffle iron, even though I sprayed it. I tried to move into the frying pan for pancakes, but they did not form. On top of it all, they didn’t taste very good. 🙁
JL, that sounds like a disaster! So sorry to hear that! These waffles have been recipe tested about 1,000 times now and we have never had any issues with the batter sticking to the waffle iron, unless the lid was opened before they were fully cooked. These are also meant to be served with syrup or some other topping as you would with any other type of pancake or waffle.
