Shrimp Zucchini Noodles Meal Prep

We’re officially in May.
Summer begins on June 20th.
Which means we’re getting really close to bikini season.
So I’ve put down the donuts.
No wait.
I’ve just put down one of the donuts.
And instead.
I’ve picked this up.
Zucchini noodles!
With a garlic butter sauce.
DUH.
But don’t worry.
I added more garlic, and made it a teensy bit healthier with less butter and a bit of olive oil.
You can’t tell the difference.
And that freshly grated Parmesan on top is LIFE, guys.
Shrimp Zucchini Noodles Meal Prep
Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 pound medium shrimp, peeled and deveined
- 1 shallot, minced
- 4 cloves garlic, minced
- ¼ teaspoon red pepper flakes, or more, to taste
- Kosher salt and freshly ground black pepper, to taste
- ¼ cup vegetable stock
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 ½ pounds 4 medium-sized zucchini, spiralized
- 2 tablespoons freshly grated Parmesan
Instructions
- Combine butter and olive oil in a large skillet over medium high heat. Add shrimp, shallot, garlic and red pepper flakes; season with salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes.
- Stir in vegetable stock, lemon juice and lemon zest; season with salt and pepper, to taste. Bring to a simmer; stir in zucchini noodles until heated through, about 1-2 minutes.
- Place zucchini into meal prep containers, garnished with Parmesan, if desired.

This looks really good… How long could you store this ? Meal prep with Shrimp and Z-noddles will it go bad in a week?
Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. I personally do a rule of thumb of 5 days, sometimes a week. Hope that helps!
This was great on day 1 but on the other days the containers were full of excess water from the zucchini. Do you have a strategy for keeping this from happening? Am I missing a step because I’d really like to enjoy this for several days:)
Zucchini holds a lot of excess moisture, unfortunately, but I find that the cheesecloth method works great! It’s an extra step but totally worth it if you have the time. 🙂

They sell rubbermaid veggie/fruit containers at walmart and target that have little green trays on the bottom. It holds the zucchini above any moisture, that is what I use.

I made this but with regular spaghetti, minus the lemon zest, and double the suggested crushed pepper. I can confirm this was absolutely delicious and with my extra crushed pepper it was spicy just how I like it! Thanks for the recipe! I have a feeling I’ll be making this more often.

This looks perfect! Question, have you ever tried freezing portions of this? Curious about freezing prepared zucchini. Super convenient to be able to freeze portions and have them there when you are craving some Damn Delicious meals 🙂
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
Brilliant concoction!! Made it. Loved it. Didn’t do chicken broth, used zucchini moisture instead. Green onions instead of parsley as didn’t have. Some fresh lime instead of lemon, all else same. Thank You!!

I will probably try this for dinner sometime, but I can’t picture it as a meal prep. Shrimp turns rubbery when reheated.

Loved this, I added some green onions since I had some that were already chopped and I did not want them to go to waste. I would squeeze out the moisture of from the zucchini next time as there was a lot of liquid, albeit tasted great! I almost think I could use half of the fat as well. Lots of crushed red pepper and some grated parmesan to top it off. It was excellent and SUPER fast!

Wow, wow, no other words! The only things I did different than the recipe was to drain the zucchini on paper towels for at least 30 minutes (changing the paper towels and squeezing the liquid out), and I added some fresh diced tomatoes right before I put the zucchini in. This is the 2nd of many “world class” dinners my husband says I made from your website. Thank you!
