Baked Ham and Cheese Croissants
So so easy to make for a crowd! The mini croissants are toasted and flaky, baked with Dijon-honey, buttery goodness. WHOA.
Is there anything better than crispy, toasted, hot ham + cheese croissants?
Wait, there is. It’s mini crispy, toasted, hot ham + cheese croissants!
And that’s exactly what we have here! It’s the most adorable mini croissant sandwiches, stuffed with smoked deli ham, Swiss cheese, and some bomb Dijon-honey buttery heaven.
I know. It’s a mouthful. Just know that it sure is heavenly.
Then they get toasted to perfectly golden brown, ooey gooey, cheesy goodness.
So perfect for a crowd, game day or an after school snack. Although I did have 4 of these for dinner tonight so it totally works for supper too!
Baked Ham and Cheese Croissants
Ingredients
- ¼ cup unsalted butter, at room temperature
- 2 tablespoons Dijon mustard
- 2 green onions, thinly sliced
- 1 tablespoon honey
- Kosher salt and freshly ground black pepper, to taste
- 12 mini croissants, halved horizontally
- ¾ pound thinly sliced smoked deli ham
- 6 slices Swiss cheese, diagonally sliced
- 1 large egg white
- 2 teaspoons poppy seeds
Instructions
- Preheat oven to 375 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.
- In a small bowl, combine butter, Dijon, green onions and honey; season with salt and pepper, to taste.
- Spread butter mixture on each side of the croissants; fill with ham and cheese to make 12 sandwiches.
- Place croissants in a single layer onto the prepared baking dish.
- In a small bowl, whisk together egg white and 1 tablespoon water. Brush tops of croissants with egg white mixture; sprinkle with poppy seeds.
- Place into oven and bake until golden brown and toasted, about 15-18 minutes. Let stand 5 minutes.
- Serve warm.

Can I make these with turkey instead?
Definitely! You could use ham, chicken or pork. Regular meat might be too tough and might not go well with the cheese. I hope this helps.

Best recipe ever! I have been making these for years and they are truly DAMN DELICIOUS!
Just made these and they’re great. I used regular croissants because I didn’t remember it said mini. Anyway I’m actually glad I did. I used 2 slices of ham and one full slice of American cheese and after the egg wash used everything bagel seasoning because that’s what I had. I made 4 at a time in my 6 quart air fryer at 370 degrees for 4 minutes and they were perfect. I think these are wonderful and glad I decided to make this recipe even though I bought the wrong size croissant. 5 stars here and will definitely make them again
Great recipe and very easy….used parchment paper on the cookie sheet to save some work. Will try a different cheese for variation. Will make this again…..thanks.
Delish! We don’t like poppyseeds so I left those off. They turned out perfect & crispy.
Delish! I found myself pregnant with a serious craving for ham and cheese croissants. I impromptu threw these together so had to make a couple adjustments but they were soooo good.
I used Mr, Mustard’s spicy mustard and didn’t have the green onions on hand. Sprayed the tops with coconut oil before sprinkling with everything bagel seasoning. My oven is on back order so I toasted them up in the air fryer. Worked like a charm!!!

I made these but with pillsbury Hawaiian croissant dough. I just misunderstood until i seen a comment verifying they’re already cooked croissants ♀️ lol oh man.
Anyways. I melted the butter & mixed it with the honey & Dijon. I coated both sides of the uncooked dough (yeah, really lol) , layered with grated sharp cheddar, ham, gruyere cheese & folded closed. I topped with the beaten egg white. Made this batch in my glass pan.
Made a second batch on a foiled cookie sheet with an extra piece of ham & layered: cheddar, ham, gruyere ham, then folded & topped with the egg white.
I followed these baking times & temps & had to bake it longer of course. I coulda probably followed directions on the dough roll but i realized what i did, when it was already baking lol.
They still came out “Damn Delicious”.
Note: I kept the dough triangles together and pressed the perforated lines making them into rectangular shapes. The baking sheet ones were crispier than the glass baking dish ones.

Made these for Easter brunch and added egg, they were a big hit! Made a few on leftover Kings Hawaiian rolls, With everything bagel sprinkle on top, awesome flavor! Will make again
* for the egg I buttered a rimmed cookie sheet, prepared eggs for scrambled, poured egg mix on sheet and baked at 400 about 8 minutes. Took out and sliced with pizza cutter, makes little squares you can fold onto sandwiches. Watch the eggs, they can burn quickly!
these are awesome!!! Definately a hit, but I also made extra batch and froze individually and were great for quick breakfast option!!!
Wow these were really good. I followed your recipe exactly except instead of poppy seeds I sprinkled them with Anything but the Bagel seasoning. I thought it might taste good and it did! Next time I might try adding some carmelized onions.
I will try to make this one long croissant to be able to stuff with the onions and cut when baked. Great idea!
Can you tell me how many slices of ham and cheese you put on each mini croissant? I’m planning on making a bunch of these and would rather buy by slice rather than pound to make sure I purchase just enough of both. Thanks!
Catherine, I would estimate 1 slice ham and 1/2 slice Swiss cheese per croissant, but you can really use as little or as much as you would like.

Just made your homemade macaroni and cheese recipe! It was the one you put in the individual serving bowls but I used a full pan. It tastes so good before I even have it finished! This is definitely my go to Mac and Cheese recipe from now on!!
Hi again! I know there are 12 mini croissants used, but how many people do you think this would serve? I’m planning a get-together with 9 people. Wondering if this would be enough if I have other appetizers along with it.

Hi Kayla! It really depends on how many you want to serve. If you want your guests to have more than one serving, I would double the recipe. Hope that helps!
