A speedy dinner made in 30 min from start to finish! Served with the most heavenly lemon dill cream sauce of your life.
I present to you the speediest chicken dinner. Aka, a stress-free weeknight meal made in 30 min from start to finish.
I’m dead serious. I have no tricks up my sleeve on this one. It really is the quickest chicken dinner anyone can ask for.
All you need is some boneless, skinless chicken thighs (chicken breasts will also work just fine here). Give them a good sear until they are fully cooked through. From there, you’ll use all the pan drippings with some flour, chicken stock, lemon juice and fresh dill to create the creamiest gravy ever.
This gravy/cream sauce makes this dish SO SO BOMB.
Serve with some rice, serve with a salad, serve with some potatoes, serve alone. You do you. I personally eat it straight out of the skillet. #weddingdiet
Skillet Lemon Dill Chicken Thighs
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- Kosher salt and freshly ground black pepper, to taste
- 5 ½ tablespoons all-purpose flour, divided
- 1 tablespoon canola oil
- 1 tablespoon unsalted butter
- 1 cup chicken stock
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh dill
Instructions
- Season chicken with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge chicken in 4 tablespoons flour until evenly coated.
- Heat canola oil and butter in a large cast iron skillet over medium heat.
- Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side; set aside. Reduce heat to medium low.
- Whisk in remaining 1 1/2 tablespoons flour until lightly browned, about 1 minute.
- Gradually whisk in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 3 minutes. Stir in dill; season with salt and pepper, to taste. Return chicken to the skillet.
- Serve immediately.

Delicious! I love lemon chicken of any kind but this was truly easy. I did make more than twice the sauce and added about a half cup of pinot grigio too. Same amount of dill though I’m more of an eyeball cook and go by taste. Served with basmati rice since I ran out of jasmine. I will make make this forever. Thank you~xx

Canola is not an articially created oil by ANYONE. It’s the ‘nice’onsumer friendly name for rapeseed oil.Canada huge exporter.
I believe grape seed oil is poisonous. Has to be modified to be consumed by humans.

This was super yummy! I had ordered bone-in skin-on thighs and I got boneless skinless thighs. Searched here and found this recipe! I happened to already have fresh dill and lemons on hand. The only thing I changed was I added a couple tablespoons of capers that I rinsed so they weren’t too salty. I love that briny taste with lemon butter sauces.

This…. it’s so simple and so amazing! I have a very serious allergy to onion and garlic and it’s difficult to adapt garlic in many recipes (also gluten free), but I don’t have to with this and it is so delicious we can’t stop eating it. We found this recipe last year as my fiancé got out of the car and brushed against the dill growing in my herb garden. He said “That dill smelled soamazing let’s make something with it tonight!” This recipe is perfect on so many levels for us. Thank you!

This was such a simple recipe and easy to make! Deeeeelicious! I actually forgot to add the butter to the sauce and it was still very good, didn’t even miss it. I would highly recommend as an easy week night meal. We served over basmati rice with arugula.

This is a really good recipe. I chose to brown the floured chicken thighs in the skillet on the stovetop for 2-minutes on each side, then finish cooking for 12-14 minutes at 400 degrees in the oven. Once out of the oven, I completed the recipe exactly as published. Terrific flavor. Easy to make. A++

I’m not much of a cook and my mom always gets on my case about it. Well today, I thought I would make her something healthy and delicious that didn’t require any fancy ingredients. When I made this chicken for her, she LOVED it. She was so impressed and wants me to cook for her multiple times a week now LMAO. This is seriously so delicious and so easy to make.
This was delicious but it wasn’t quick, as I have the **worst** cooktop: SLOW & cooks unevenly. [Has anyone ever replaced a cooktop in an island? Not sure I can find the same exact dimensions.] I would love to make it in the oven. I saw someone cooked it in a 350 oven, but I don’t know for how long. We had it with rice and the sheet pan broccoli which was yummy, and perfect for this broccoli-loving household. I’ll try it the oven next time.

This was so good and actually quick to make! (A lot of recipes out there will claim to be easy, but the reality is different…) My roommates and I loved it, and I’ll definitely be making it again. Also echoing Colleen’s question about how/when to add the lemon slices so the dish looks pretty like in the picture!

I’ve made it slightly different three times. 1) Didn’t have chicken stock and used bouillon (still amazing) 2) By the book except had a little trouble whisking in remaining flour (no problem still delicious) 3) By the book again except I forgot the butter in the sauce. Still Damn Delicious. Very versatile easy recipe. Only downside is I seem to dirty too many dishes when I cook. Lol.

I made this the other night. I added an additional half amount of both broth and lemon juice as I wanted to be sure we had enough sauce. And then I must confess that I added a few splashes of heavy cream (I know I’m evil), but that really made the sauce awesome! The entire family loved this dish and I’ll make it again – with or without the cream!

I made this using chicken breast, I cut them in half. I used dried dill so I used 1 tbsp. instead of 2 but it was still very good. I would definitely make this again. It was so easy to make with not a lot of ingredients.
Question – can I substitute arrowroot or cornstarch for the flour to make it gluten free?
When I added the 1 1/2 T flour to pan drippings, the flour clumped. I stirred after adding with a whisk but stayed clumpy. What happened?

Perfect recipe to use my fresh dill and lemons! I always have to make extra gravy, this recipe reduces to about 1/2 cup! I doubled it and served with mashed potatoes, and the gravy was delicious on the chicken and the potatoes. Will absolutely make this again, and plan to add mushrooms to the gravy too.

I’ve made this 5 or 6 times over the last several months, needless to say I LOVE it!! I added a little more dill than the recipe calls for because I had an abundance of it and I like the flavor. This was delicious! I added minced shallots with the flour after cooking the chicken and broccoli florets with the lemon juice and stock. The flavor is so bright and fresh, it was exactly what I was hoping for. The only problem I had was saving enough for lunch tomorrow… both my partner and I had seconds and found it difficult to stop there!

This was so delicious! I added minced garlic while the sauce simmered. I think next time I will add mushrooms and peas to add a bit of sweetness to the acidity of the lemon next time. My 8 year old son helped me make this and it turned out great. We put it on top of brown rice.

I decided to give this a try. I’m not a super cook but it was absolutely delicious. I didn’t have any chicken so substituted pork chops and mushroom broth. The rest of the recipe I followed. It was amazing and so simple to follow. Will make again soon.
Okay i made this for supper last night. Only change I. Made Was. Freeze. Dried dill instead if fresh, I use what I have in the house. It turned out very good. My first bite, it was good, and then the flavor exploded and it was very good. Simple, easy to make, but not another tasteless chicken dinner, or so declared my son. I love her website and I continue to love her recipes

This dish was excellent! I doubled the recipe and my family of four left nothing on their plates. I did not have any dill in the house so I used fresh thyme with a little parsley at the end. I love lemon so I also used the zest and put it in at the end for a bright lemony taste. Awesome dish!!

Hi! I made this a few weeks ago and it was just wonderful. I used bone-in thighs that were large, so it took quite a while to cook. I want to make it again tomorrow and have the bone-in thighs. Is there a way to modify this to just bake it? That would take a little less tending. Looking forward for your advice!

I made this tonight and was kind of disappointed. The sauce was sparse and looked nothing like the photo. The chicken did have a really good flavor though. I may try it again and add more ingredients for the sauce to make more of it.

Hi Kathy! So the “obviously cooked lemon slices” were purely done for photographic purposes. It is not needed in this recipe and would be an additional, unnecessary step – unless you wanted to take photos. 🙂
