Sheet Pan Shrimp Fajitas

The quickest (easiest) sheet pan dinner! Serve with warm tortillas for a lightening fast weeknight meal. SO GOOD!
A super speedy weeknight meal all made on one sheet pan? Yes, please!
With a simple chili powder mixture using pantry ingredients (chili powder, cumin, oregano, and paprika), I have been making this at least once a week, swapping out the shrimp for my other favorite sheet pan dinner.
When ready to serve, squeeze out those fresh limes right on top and warm up those tortillas. It’s quick, fast, and oh-so-so-good.
Sheet Pan Shrimp Fajitas
Ingredients
- 1 ½ teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- Kosher salt and freshly ground black pepper, to taste
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 orange bell pepper, cut into strips
- 1 sweet onion, cut into wedges
- 3 cloves garlic, minced
- 3 tablespoons olive oil, divided
- 1 ½ pounds medium shrimp, peeled and deveined
- ¼ cup chopped fresh cilantro leaves
- 1 tablespoon freshly squeezed lime juice
- 6 8-inch flour or corn tortillas, warmed
Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- CHILI POWDER MIXTURE: In a small bowl, combine chili powder, cumin, oregano, paprika, 1 teaspoon salt and 1 teaspoon pepper.
- Place bell peppers, onion and garlic in a single layer onto the prepared baking sheet. Stir in 2 tablespoons olive oil and half the CHILI POWDER MIXTURE; gently toss to combine.
- Place into oven and bake for 10 minutes, or until the vegetables are beginning to soften.
- In a large bowl, combine shrimp and remaining 1 tablespoon olive oil and CHILI POWDER MIXTURE.
- Working carefully, move vegetables onto one side of the baking sheet. Place shrimp onto the opposite side of the baking sheet in a single layer.
- Place into oven and bake just until shrimp are pink, firm and cooked through, an additional 6-8 minutes. Stir in cilantro and lime juice.
- Serve immediately with tortillas.

Every Damn Delicious recipe I’ve tried has been a success and gets added to our regular rotation. This was no exception. My husband is currently cutting back on carbs and this was an easy meal to throw together when all our kids were gone. Served with Mission zero net carb tortillas but I could have put it over cauliflower rice for him as well. Amazing! Love these recipes!
Could I turn this into shrimp tacos

Followed the recipe exactly with the exception of using only 1/4 tsp ground black pepper instead of 1 tsp freshly ground pepper as indicated in the instructions. Served with guacamole and tortilla chips, yellow rice and refried black beans. Yum!! Thanks for sharing this delicious recipe!

Delicious! Easy to prep and cleanup too! The spice mixture is perfect! I wouldn’t change a thing! I’m doing Weight Watchers and this came out to only 4 pts as written! Great recipe!
I’ve been looking for quick, easy, nutritious but still delicious dinners now that my time is so limited. These were so easy but tasted like a meal that took hours and my whole family loved them. These will definitely be part of our regular dinner rotation!

Wow! So quick, easy, and flavorful! I forgot the garlic and it would definitely add depth to the flavor but this was very tasty without it. I used a variety of veggies so it’s easy to make it vegetarian and next time I’ll add some tempeh or tofu.

Made this for dinner tonight instead of the boring old ground beef tacos I usually get stuck making. They’re the bomb! I used Ancho chili powder and it gave I a nice kick! I didn’t realize we were out of cilantro from a previous recipe, so I left it out. This is still quite tasty without it, but I love cilantro and will make this again soon with it next time. Thanks for the delicious recipe!
The easiest most amazing fajitas!! I can take or leave shrimp but these are oh so good. I used raw cook your own flour tortillas. Will definitely be making these again!

I made this for a New Year’s Eve party (with a crowd of 18 people– recipe x4) and it was delicious and fun! Everyone loved it! Offered a choice of flour or corn tortilla plus salsa, sour cream, and homemade guac. I could never have done this on the stovetop. Sheet pan was the way to go and the spice mixture is excellent.
