5-Ingredient White Chicken Chili
All you need is 5 ingredients and 15 min from start to finish! That’s it! It doesn’t get any simpler, easier or tastier!

I’ve had such a wonderful time here in this beautiful city, soaking up so much culture, meeting great people and spending time with great friends.
But before I attempt to catch a few hours of shut-eye to catch my early morning flight back to San Francisco, I just had to share this epic chili.
It takes just five ingredients and it comes together in fifteen minutes from start to finish.
Really.
All you need is chicken broth, leftover roasted chicken from the night before, beans, salsa verde and cumin. That’s it!
From there, you can add some fun toppings like fresh avocado and sour cream but either way, you’ll be so cozy with a piping hot, steaming bowl of this chili.
You’ll also be able to feed an army with this so you’ll be well fed for a couple of nights!
5-Ingredient White Chicken Chili
Ingredients
- 6 cups chicken broth
- 3 cups leftover diced rotisserie chicken
- 2 15-ounce cans Great Northern beans, drained
- 2 cups salsa verde
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat a large stockpot or Dutch oven over medium heat. Stir in chicken broth, chicken, beans, salsa verde and cumin; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer until heated through, about 5 minutes.
- Serve immediately, garnished with cilantro, if desired.

Absolutely LOVE this recipe!! I’ve been making it for years and it’s perfect just the way it is but I like to add corn in mine. Top with cilantro, cheese, and sour cream for the perfect bowl!

This recipe was so easy and delicious! We brought all the ingredients on our road trip and made it for dinner one of the nights we were on vacation. The only thing we forgot to bring was the cumin, so we replaced it with some cayenne to give a little kick. We also sautéed some onion, celery, and red bell pepper before adding the other ingredients, and it turned out great! We will definitely be making this again.

Sure fire crowd pleaser! This has been a favorite and consistent monthly go-to for the past 4+ yrs. Its in the instapot as I type! It can be garnished with so SO much: Avocados, Greek yogurt, jalapeños, lime or lemon, cheese, cilantro, a side of tortillas or tortilla chips. I made it for my ex and he said it was a dish that would get me a marriage proposal. HAHA! Indeed he did end up proposing but I dodged a bullet & fortunately it was short lived. BUT alls to say it will win over the next suitor… won’t be able to resist my charm, informed mind body chakras AND my white chicken chili.
Pro-tip- find a Greek style rotisserie chicken or just any rotisserie chicken; put the bone in for flavor & immune boosting minerals. That flavor is fiiiirrrrreee

OMG such an easy recipe! I used La Victoria Green enchilada sauce as it is what I had on hand. I also added 1/2 cup heavy cream at the end which made it so awesome! Thank you for such easy Ideas!!

Hi there! I was just wondering how spicy this dish is…i’ll be feeding a 6-year-old and a one-year-old, and i’m wondering if 2 cups of salsa verde might make this a little too much for them. Would it be possible to leave it out? Or is there anything I can substitute with if it’s necessary for texture? I’m so excited to try this!!
You can lessen the amount as needed but I do not have a recommended substitute at this time. Sorry!
just a quick update…I left out the salsa verde completely, and the recipe turned out fantastic! everyone enjoyed, and no lack of flavour either. Though I’m sure the salsa would have given it more punch. I will be testing with maybe a half-cup of the salsa next time, just to play it safe with the kiddies. SO DELICIOUS!

I love your white chicken chili recipe but I was wondering is there a way to make it just a little thicker with out adding to many calories?
You can add cornstarch as needed, 1 TBS at a time, until the desired consistency is reached.
Take a half cup or so of the beans and mash them up until its like a paste, then stir it back into the beans until it’s the consistency that you like.
Now my go-to recipe for white chicken chili! So fast, easy and flavorful! Thank you!

Good, but very salty. Use low sodium chicken broth and try to find green chili salsa that is low in sodium.

This looks so amazing, but I don’t care for beans. Do you think this recipe would work if I left out the beans??
Lauren, as this recipe has only five ingredients and requires 2 cans of beans, I do not recommend omitting it entirely. If you are not a fan of beans, this recipe may just not be for you.
You could try puréeing the beans lending to a thicker soup but still giving their flavor.

Salsa verde is also known as “green sauce”, which consists of pureed cooked or raw tomatillos, jalapenos or other chili peppers, white onion, cilantro, and lime.
Wow! Just made this with Trade Joe’s frozen chicken and chicken broth, salsa verde, and northern beans from Kroger and TJ. I added Publix mexican cheese and sour cream with a crumbled up tortilla chip. Best soup ever! So glad I found this!

You can certainly use rotisserie chicken. As for salsa verde, I use the brand from Trader Joe’s but any brand will work just fine in this recipe.

Help – I made this but used 8 cups of chicken broth (2 containers) Now it is too soupy, more like mexican chicken soup. I tired adding some cornstarch to thicken it – any suggestions?
Is there a reason why so much chicken broth was used? The recipe calls for 6 cups. Also, this soup is not meant to be thick.
I’m guessing momoffour wanted to use up both boxes (tip – free leftover broth in 1 or 2 cup portions next time).
I used to get a White Chilli from a restaurant in Leavenworth, WA called the Soup Cellar that I absolutely loved, and have been searching for a recipe that would recreate that flavor for years – so can’t wait to try this. I like my chilli to be thicker (rather than a thinner broth based style), so I plan to puree some of the soup, then add it back into the pot to make it thicker . Will let you know how it turns out after I try it.

WOW!! So easy, and SO SO GOOD! I bought a rotisserie chicken from the store and shredded it. This was a fantastic meal. Everyone in my family really enjoyed it. My overly picky nine year old gave it a thumbs up, and said it was extremely awesome. This will be a do over for SURE!

It’s been raining here since Saturday and they say starting tomorrow the temperatures will drop below freezing point. A big bowl of hot soup is my go-to meal until the weather warms up a little.

Hi! I’m from Mexico City. First of all, you should know, I just love your blog! It’s amazing how you make things see easier to do than (sometimes) they really are (: So, I was wondering if you could upload more images about the process of the food you prepared please! I think it would be easier for us when we are going to start making it. It’s just an opinion that would be awesome to me, cause much of the ingredients you mention, here in Mexico are difficult to get them in the supermarkets cause they just don’t know them.
