Blueberry Vanilla Muffins

These light and airy muffins are the perfect way to start your mornings, loaded with plump, juicy blueberries and extra vanilla goodness!
I hope you all had a great 3 day weekend. Jason and I made a short trip up north past Sacramento to take a look at one of the puppies we are going to adopt. Yes, we are expectant corgi parents! Iโve been trying to keep it under wraps but with a face like this, how could you keep it to yourself?
This little guy definitely made his way to my iPhone home screen, and every time I see his cute little face, my heart melts just a little bit. Heโs only 6 weeks old right now but weโll be able to take him home at the 9 week mark. Itโs only 3 weeks away but this may just be the longest 3 weeks of my life!ย But before I go on and on and on about my new love for this puppy, letโs talk muffins.
Iโm pretty sure youโve all had a blueberry muffin. Itโs pretty much one of those standard muffins, whether you pick one up at the grocery store, at Starbucks, or those massive Costco-ones. Iโve made several blueberry muffins myself – from a granola topping to a blueberry jam swirl.
But this one here – this may just be my favorite blueberry muffin creation yet. Thereโs nothing really fancy going on here except for one very special ingredient – vanilla bean paste. You can find this either at Williams-Sonoma or Amazon.com. I prefer the latter because Iโm too lazy to leave the house and with Amazon Prime, everything gets to your door in 2 business days. But I digress.
Now these muffins – theyโre loaded with juicy, plump blueberries in the most light and fluffy muffin just blooming with vanilla goodness. And with a sprinkling of sparkling sugar on top, you get a nice crunch every time you take a bite into these. Theyโre perfect for breakfast-on-the-go or even as a snack when you need to satisfy your sweet tooth.
Either way, just be prepared to have at least 3 of these muffins in a single serving – you won’t be able to stop at just one!
Blueberry Vanilla Muffins
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ยฝ teaspoon cinnamon
- ยฝ teaspoon baking soda
- ยผ teaspoon salt
- 1 ยฝ cups buttermilk
- โ cup sugar
- ยผ cup unsalted butter, melted
- 1 large egg
- 1 tablespoon vanilla bean paste
- 1 cup blueberries
- 2 tablespoons sparkling sugar
Instructions
- Preheat oven to 350 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside.
- In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt.
- In a large glass measuring cup or another bowl, whisk together buttermilk, sugar, butter and egg. Stir in vanilla bean paste. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and gently toss to combine.
- Scoop the batter evenly into the muffin tray. Sprinkle with sparkling sugar. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean.
- Remove from oven and cool on a wire rack.

Can this recipe be used for bread instead of muffins?
HI. I can’t seem to find all purpose flour here in australia so can i use self rising or plan flour.?
Plain flour would be a more suitable substitute.
Can I add a bit more sugar to sweeten them jut a tad? Also, how do you get your berries to not fall to the bottom. Thanks.
Yes, absolutely. You can also toss the blueberries in some flour so they do not sink to the bottom.

Can regular vanilla extract be substituted for the vanilla bean paste? If possible, what amount? Always looking for blueberry recipes. Just found your website and you have such a wide variety of recipes for any palate!
Yes, absolutely. 1 tbsp pure vanilla bean paste = 1 tbsp vanilla bean extract.
Sounds amazing – blueberries and vanilla – yummmmm. I’m assuming these are meant for the ‘regular’ size muffin tins. Can, and how, could you adapt this recipe to the oversize muffin tins?
Yes, you can make these into oversized muffins but you would have to extend cooking time as needed.

I don’t mean to sound stupid- but what is sparkling sugar? and where do I find this?
Not stupid at all! Sparkling sugar has a coarse texture with an amazing sparkle, usually for decorating cupcakes/cakes. You can find these at a crafts’ store or amazon.com.
These were great! I substituted a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water) for the egg due to an egg allergy. I had to bake for about 25 minutes. Next batch Iโll use chocolate chips instead of blueberries for the kids ๐
OMG, these muffins are amazing! I’ve already made them twice this week and my family loved them! Even my niece who is not a big fan of blueberries raved about them. I splurged for the vanilla bean paste and it was completely worth it! Oh, and I actually got 16 muffins out of my batter. Four extra muffins for ME to eat! YAH me!!! Oh. My. Goodness. This is without a doubt the best blueberry muffin I’ve ever had! The vanilla bean paste (<3333) makes it, I would definitely tell anyone to buy some! I even ran out of eggs and had to substitute 1/4 c. applesauce and they still came out perfect. Five stars!

Yes, you can certainly substitute vanilla extract, although the vanilla bean paste is really the star ingredient in these muffins!
