Pumpkin Pie Oatmeal

Whether it’s pumpkin season or not, I plan to have this bowl of oatmeal every single day of the year.
Really. With just 10 minutes, how can you skip breakfast?
And you get to have pie – guilt-fruit pie – to start your day.

Pumpkin Pie Oatmeal
Ingredients
- 1 cup old-fashioned rolled oats
- 1 ¾ cups almond milk
- ¼ cup pumpkin puree
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup chopped pecans
- ¼ cup maple syrup
Instructions
- Combine oats and milk in a small saucepan over medium heat.
- Bring to a boil; reduce heat and simmer, stirring occasionally, until desired consistency is reached, about 3-5 minutes. Stir in pumpkin, vanilla, cinnamon and nutmeg until heated through, about 1 minute.
- Serve immediately, garnished with pecans and maple syrup, if desired.

I’ve been making this for breakfast all week. It’s delicious and really fast and easy. The only change to the recipe is that I add a pinch of salt to bring out the flavors. Thanks so much for such a yummy fall recipe!
My 3.5-year-old daughter and I made this together this morning! It was quick and easy, and she’s so proud of making this! It wasn’t as filling as I thought it was going to be, but it was delicious and seemed pretty healthy, although I plan on using maple syrup next time. We didn’t have steel-cut oats, so we used packets of Quaker Instant Oatmeal (plain) and measured out the amount needed (3 packets = 1 cup), but still made this on the stove. We also were out of ground nutmeg, so we used pumpkin pie spice instead (same amount), and were out of maple syrup, so we used pancake syrup (same amount). Everyone enjoyed this, and my daughter said it tasted like pumpkin pie.
This is the absolute best oatmeal. I make at least three times a month and it’s so quick and easy!

These oats are absolutely delicious! Tastes super similar to pumpkin pie. I cut the recipe in half, used two tablespoons of brown sugar instead of maple syrup, and added a bit of butter. Soo good.
Curious if anyone has subbed honey for maple syrup — if so, how did this turn out!

Pretty good for me, ” a little bland” said the 13yo. Added some salt. Made 1.5x recipe for 4, otherwise we’d still be hungry. Just drizzled the syrup, 1/4c was too much for us.
I used the recipe as a guide. I added a pinch of ginger, some mct oil infused with Cordyceps and cut back on the maple syrup (sugar is not the way to start your day). Loved this! A great post workout breakfast.
Loved this! Healthy, flavorful and cheap. I didn’t have nutmeg so I used pumpkin pie spice instead of that and cinnamon, which worked out great. I doubled the recipe so I can take leftovers to work this week, and I’m glad I did.

I made it with whole milk rather than almond. It was a little sweet for breakfast. It definitely tasted like pie! Next time I’ll try with half the maple.

Ahhhh-mazing! I’ve been making this recipe for 2 years now and I love it! I add just a sprinkle of turbinado sugar on top for extra sweetness. If you haven’t tried this recipe, you’re missing out!
This oatmeal is delicious and fitting for this autumn day. After cooking the oatmeal, in a small skillet, I toasted the pecans. The maple syrup drizzle, pecans and splash of milk made for a fine finish! I’ll definitely make this again.

Yes, absolutely.
Will this keep well in the refrigerator? If so, for how long? I would love to make this batch on Sunday and divide into individual portions for the week.
I would say 1-2 days but methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.
Can you use steel cut oats in place of rolled oats?
Yes.
I don’t see when to put the vanilla in…it just says mix oatmeal and milk, then cinnamon and nutmeg and pumpkin puree…no vanilla. ..
The vanilla extract is added with the pumpkin.
