One Pot Taco Spaghetti
All your favorite flavors of tacos in spaghetti form – made in ONE PAN! So cheesy, comforting and stinking easy with no clean-up!
Tacos in pasta form? Um, yes, please. I mean, the answer is always yes, right?
And if not, the answer should always be yes when it’s made in one single pan.
No joke here – everything gets dumped right in, including the uncooked spaghetti. And no, the tomatoes should not be drained. The liquid is crucial to help cook the pasta.
When ready to serve, sprinkle on that cheese to let it get all ooey gooey on top.
It’s practically a spaghetti casserole with pretty much zero work and clean-up!
One Pot Taco Spaghetti
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef*
- 1 1.25-ounce package taco seasoning
- 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 8 ounces spaghetti
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 Roma tomato, diced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
- Stir in Ro*Tel®, tomato paste, spaghetti and 3 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheeses. Cover until melted, about 2 minutes.
- Serve immediately, garnished with tomato and cilantro, if desired.

I added about 1.5 cups of my homemade cream of tomato soup after the water was absorbed to make the sauce creamy . Will definitely make it again!
I only used half a pound of ground beef and used half the amount of cheese. It came out perfect with the amount of water called for in the recipe. It definitely was easier than cooking the pasta separately. Definitely a one pot wonder and a recipe I would make again and again!!!
I am extremely happy I found this recipe. I made it for my grandson and I and he could not stop eating it.. I had to go for seconds also. Such a simple awesome tasting recipe. I also use ground chicken . I like the fact cheese can be added at the end because I can’t eat cheese but my grandson can. I made this for dinner and my family LOVED it. I did change the rotel tomatoes (didn’t have them) for diced stewed and pico de gallo, cooked the pasta (angle hair) separate.

This was so very good and a different spin on pasta I didn’t know I needed. I tweaked the recipe for my own tastes but kept pretty close to the original.
I did cut up one medium yellow onion and sautéed that with some jarred garlic before browning the meat. I made a goof and forgot to add the taco seasoning after it but threw it in with everything else (turned out so yum still!). I used 2 cups of water and one cup of medium picante pace salsa. Used thin spaghetti and it was done in about 16-20 min for me. I waited to dole out my own cheese afterwards as too much lactose isn’t good for me :).
This will be made again! I can see it being a hit.
Just made it.. followed the recipe ( well I left out the cheese ) but it was so dang on good!! I’ve made several of her recipes and they are all so good!!
Cook spaghetti separate so you can rinse it of the starch after, then mix into the bubbly hot sauce. Let sit 10 minutes. 1.5 lbs of beef, 2 packets of Taco seasoning, 2 cans undrained of fire roasted tomatoes, and 1 can undrained corn, and one can of rinsed black beans with 1/2 cup of water. Shredded cheese on the side (not the bagged kind).
Everyone on here is saying how much they liked and enjoyed the recipe. You are the only one that basically changed the whole recipe. Nobody asked. And not once did you say anything about how she made it

The family loved this. I used beef broth like others suggested…Also added a second taco seasoning, green chiles, a little more broth and noodles than it called for just trying to stretch the serving a bit…However it would have been perfect the way the recipe was written….Winner!

This was delicious and so easy. My whole family loved it. Mine came out a bit saucy, because I got worried the pasta wasn’t cooked enough and put in a little more water, but we liked it saucy. This turned out really good. I didn’t have RoTel, so I chopped up some tomatoes and added some tomato juice. I will definitely make again.
I just made this for the first time, following the directions, and when the spaghetti had cooked 15 minutes, the water had barely absorbed. I removed at least a half cup of water and it was still “soupy”. Can you tell me what I did wrong? I can’t wait to taste it.
Wonderful receipt. I skipped the tomato sauce. Not opening a can for such a little bit . Topped with the tomatoes and also green onions and just a little sour cream. Like this better than regular spaghetti. Thanks so much for sharing

Loved it….with my own twist. I prepared angel hair pasta separate. 2-2 1/2 pounds of ground beef with two packs of taco seasoning. A can of petite diced tomatoes drained. Sautéed onions with garlic and an array of my favorite seasonings. Oh and some mild salsa with a cup of water. Topped it with cheese and sour cream.

Incredibly easy to make, and EVERYONE loved it. I also chopped up some green onions and some sweet peppers to sprinkle on top after it was served to make it more like fixing your own tacos.

I made this twice. The first time as published. The second time I sauted onion, red bell pepper, and mushrooms. In addition I also added a small can of tomato sauce as the original was a bit spicy and with the added vegetables a little additional sauce was needed. Wonderful quick dish.

I only have a 1 ounce packet of taco seasoning (not a 1.25 ounce as the recipe states). Will this be okay?
Yes, but you might want to add some extra seasonings/spices to add some more flavor.
I have made this basic recipe twice now and both my wife and I have enjoyed it all three days each time. This last time I embellished a tad by sautéing a half cup of onions with the meat and I use 4 Tbls of Tone’s bulk taco mix instead of the packaged stuff. I also upped the spaghetti to about 10-11 oz. we also needed a healthy shot of Lowery’s Season Salt and I like some pepper flakes + Parmesan cheese. Really nice recipe, and thanks.

Whipped this up today because I had a hankering for tacos but wanted something with a twist, and it’s ridiculously good! I had a few modifications though – used bowtie pasta and a can of diced tomatoes with a can of diced green chilies (the local stores don’t seem to stock Rotel, so had to improvise), and cooked some onions and garlic in with the ground beef. Also used some beef stock in place of water for a little extra flavor. Definitely have to make this again – and again and again and again!

I made this tonight for supper and it was amazing! The only thing I did different was add a can of Siracha black beans, drained, and a can of drained diced tomatoes. I also cooked my pasta separately and then added it all together. It taste GREAT!!!

So you put the water and noodles in with the seasoned beef? Wouldn’t that kind of wash out the taco seasonings? Wouldn’t it make more sense to cook the noodles separately and then add them to the rest of the ingredients?

Tried this today and my hubby said “damn this is good”. LOL! I didn’t have tomato paste so I used a tablespoon of ketchup (don’t judge me). I also added half a cup of onions and 2 cloves chopped garlic to the ground beef for more fresh flavor. At the end we topped it with parsley, mozzarella cheese, cheddar cheese, and a scoop of ricotta cheese (AMAZING!) Definitely will be in the rotation. For those who it did not work well for, I suggest after bringing it to a boil, only turn it down to medium heat and cover. I opened it for the last 5 minutes to help evaporate some of the liquid and mix the noodles around and it turned out perfect! Thanks for the recipe!

This is a really good recipe, and it’s something we make often now. But make a vegan version: I sub the meat for the beefless crumbles and don’t add cheese.

I didn’t have tomato paste so I used 3 tablespoons of tomato sauce. At the end I stirred in black olives along with the cheese. I also used veggie spaghetti and it cooked perfectly with all water absorbed. This is a keeper!

I made this tonight for dinner and it was fabulous!! I didn’t have tomato paste but I did have tomato sauce so I used that instead and I cooked my noodles separately . Other than that I followed the recipe to a ” T ” and the meal was simply delicious. Easy to prepare and so filling. This is a def. keeper.
Ahhhh…the one dish meal! For me, there’s nothing worse than making a great meal and having tons of dishes to do afterwards. I wanna relax and savor the meal. I took a minute (literally) to rinse the skillet out and then fill it with soapy water so that before I went to bed, clean up was a snap! I made the One Pot Taco Spaghetti last night as directed with the exception of the cilantro (I didn’t have any) and it was wonderful. I did make a goof: I put three CANS of water instead of three CUPS but I just uncovered it after the spaghetti was cooked and the extra just evaporated. I do think it could use more veggies and think I’ll add some bell pepper next time (cook it up with the meat). There were only two of us last night and we have only leftovers for one….guess I’ll double the recipe next time! This will be a staple in our home! Thanks for the great recipe!!!

YUM! I made this last night, and it was outstanding! Hubby and I split the leftovers for lunch today, and it was a good lunch again! I love recipes that will make through more than one meal well and are easy to pack up!

Yes, however, I have found that one pot recipes can be quite finicky when doubled. It may be best to make the recipe twice but as always, please use your best judgment.
Followed recipe exactly but added diced green peppers and substituted penne pasta for spaghetti and cheddar cheese for mozzarella because that is all I had and it was great, I’ve never made a one pot pasta dish and will do again. Thanks!

This is so good. I’ve made it several times now, and everyone loves it. I love that it’s a one pot dish and how the pasta cooks and absorbs all the liquid. Clean up is a breeze. My college son loves to make it with ground turkey. I just made it for my 85 year old mom and she went nuts for it. We’re planning on freezing the leftovers for her. I’m thinking it should hold up ok. Thanks for such a crowd pleasing recipe!

Made this last night. All I can say is WOW! That combination of ingredients was so delicious. I usually tweek recipes to suit my tastes, but this recipe needed no tweeking. I can’t wait to make it for company. I will double the recipe.

This has turned into a favorite. We can’t eat any this to spicy and don’t care for rotel so used a can of diced tomatoes with onions instead. Turned out great. Not sure why some people are having trouble cooking pasta I didn’t have any trouble. Only trouble with recipe I had was hubby ate just about all of it. I had just a small amout from now on will have to make twice as much.

I dont know if anybody else had this problem but mine was SUPER watery. Looked way more like a soup than anything. I double checked the instructions and the measurements so I have no idea where I went wrong.
I had the same problem. I ended up draining off most of the water with a glass. If I make this again I will probably cook the pasta separately and mix it in at the end, which would be a shame.

Was the pasta fully cooked through?
I’ve made this twice now. The first time I was also scooping water. The key is in that in the “bring to boil” step you really need to boil it. Not a light bubbling boil but a full rock-the-pot like you’re cooking dry pasta boil and let it go for a few minutes. The noodles absorb a lot of water at this stage.
I found this recipe on pinterest and tried it tonight. I too had a lot of water in the pot! I’m wondering if adding 10 oz. of pasta instead of 8 would take care of the problem? I also added chopped onion, yellow pepper, cumin, garlic powder, and dried cilantro in with the meat.

Similar to Laurie, I didn’t have a can of rotel, so I used a can of diced tomatoes and a can of diced green chilies. It was quite good. I loved the flavors. Next time, I will need to double the recipe. We tan out of taco spaghetti before we ran out of appetite.
I made this tonight, didn’t have rotel or a tomato, so I used a can of diced tomatoes and some salsa. I know it’s not exactly the same, but it worked and we enjoyed it. I roasted some yellow and green bell peppers and served them on the side.

No, the water would not be needed.
By cooking the pasta separately, it would change the taste of the dish. We loved how the pasta absorbed the taco flavoring. We do suggest that if you do not like hot spices, that you omit the green chilies and use mild taco seasoning. Yum…..

That’s what I am doing for my family of 3 (me, mom, and dad) and it seems to be working fine so far. It’s not done yet though! The only thing I’m concerned about is the doubling water. There’s quiet a bit in it! I guess we’ll just have to see!
