What is a bellini? And what is prosecco?
A bellini is a classic Italian cocktail, created around 1948 in Venice, and is typically made with prosecco and peach puree. Prosecco is an affordable Italian sparkling wine.

Ingredients
- 3 cups frozen peach slices

Instructions

Hey folks… Here’s my version of the classic “Peach Bellini, that I created for the 1987 North American science fiction convention in Phoenix Az. :
my ingredients:
2 lbs of frozen peach slices (keeping two or three slices separate per serving for garnish if needed)
1/2 pint of Peach Schnapps
approx. 1/4 (+/-) of 1/5th of Coconut Rum
1 can of frozen Hawaiian’s own pineapple/guava frozen juice mix (no water added)
Using the large 64 oz. Vita-mix carafe
Add the above listed ingredients. cover, and blend on high until, everything is well blended into a frozen slurry….
pour into glasses, adding frozen slices of peach and a sprig of fresh mint as garnish, and serve
(depending on glass sizes, serves 4-8)
At the sci/fi convention? I had to make many batches, as this was a Major Hit… Enjoy

How do you make this without mango nectar? I’m allergic to mangoes
You can simply omit or use something else instead – for instance, you can use papaya or even nectarine.
Easy.. My Girlfriend is also allergic to mango’s.. So in my version? I substitute pineapple/guava.. works wonderfully

I have a wonderful peach wine that I will try this with. On another blog, it was suggested to pour this into ice cube trays so you can take out only a few cubes at a time, add a small splash of wine to the blender and the cubes, blend and presto – you have a one (or two or three) serving drink.
Hi! I was just wondering what is a good food pairing with this drink? Or is it good on it own?
It’s honestly great on its own, but you can also serve with a light spring salad, risotto, garlic fries, scallops and/or pasta.
This is a brunch drink IMO. Think Eggs Benedict or Chicken and Waffles.

Why does it say “set aside” after you blend peach /mango….set aside to me means your not going to need it just yet…in this case you blend and pour into a glass unless I am missing something?
