Slow Cooker Corn and Jalapeno Dip

Simply throw everything in the crockpot for the easiest, most creamiest dip ever. It’s so good, you’ll want to eat it with a spoon!
I think it’s safe to say that I’m a bit obsessed with dip, whether it’s guacamole, spinach and artichoke dip, enchilada dip, queso dip… the list goes on. But when you can make the creamiest of all dips right in your slow cooker – well, that may just be the best dip of all time.
No, but really, you cannot go wrong with a cream cheese based dip with melted pepper jack cheese, salty Parmesan, sweet corn kernels and jalapeños for just a hint of heat. For extra spiciness, feel free to add in more jalapeños to taste. You can even take it one step further and top this baby off with crumbled bacon but either way, you’ll want to eat this dip with a spoon. Who needs chips anyway?
Slow Cooker Corn and Jalapeno Dip
Ingredients
- 4 slices bacon, diced
- 3 (15.25-ounces) cans whole kernel corn, drained
- 2 jalapenos, seeded and diced
- ½ cup sour cream
- 1 cup shredded Pepper Jack cheese
- ¼ cup grated Parmesan cheese
- Kosher salt and freshly ground black pepper, to taste
- 8 ounces cream cheese, cubed
- 2 tablespoons chopped chives
Instructions
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
- Place corn, jalapenos, sour cream, Pepper Jack cheese and Parmesan into a 6-qt slow cooker; season with salt and pepper, to taste. Stir until well combined. Top with cream cheese.
- Cover and cook on low heat for 2 hours.
- Uncover and stir until cream cheese is well combined. Cover and cook on high heat for an additional 15 minutes.
- Serve immediately, garnished with bacon and chives, if desired.

If I use frozen corn (thawed and drained) instead of canned, how much should I use? 2 lbs? 3 lbs? Not sure how much of the canned corn is liquid vs corn kernels. Thanks — looks delish!
Use frozen corn, thaw under running water in a colander to cut down on sodium, and precooked crumbled bacon to cut down on dishes 🙂 love this recipe and it’s a staple in my home…kids will eat it alone by the bowlful.

This was so yummy! I added paprika to the recipe, and didn’t have pepperjack so I substituted monterrey jack and sharp cheddar. Was a huge hit!
Do you ever use fresh corn cut off the cob for this? Would any changes be necessary?
I only have Monterey Jack cheese, not the Pepper Jack. What spices can I add to add in the pepper flavor? Making this as a side for Christmas dinner.
I’ve made this several times for get togethers, and its always is a hit! I add a dash of chili powder, cumin and garlic powder to it. It’s great to using different types of corn, such mexi-corn etc.
So good and so easy to make! I left out the bacon because I was feeling lazy and it was still great. Will definitely make this again in the future.
Yummy dip. I made it except I subbed serranos for jalepenos (there weren’t any fresh at the store) and added a dash of cayenne pepper. I think hot sauce would also be good. I served with chips, crackers, and cut red bell peppers into “chips.”
Great dip!! Hubby loved it!! I do disagree I. Serving right away. If you let it sit it’s thicker and even better to dip I followed the recipe but did sub one can of cream corn.
I made this for a Super Bowl party at work today. Everyone loved it! The only substitution I made was 1 can of creamed corn instead of corn kernels, and I did not use bacon. This is definitely a keeper!
Hi there…would like to take this as an appetizer to a party, but don’t want to bring the crock pot. Do you normally serve in the crock pot…or a serving bowl? Could I quickly heat in the microwave if it were to need re-heating during the party?

Freezing sounds like an amazing idea but unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
I have made this three times, and it is delicious. My whole family has asked for the recipe now, they just love it. I always use frozen corn, thawed of course. And I can’t add the bacon, we have a hater in the group, it’s still awesome. I forgot the Jalapeños yesterday, and I have to say I do love the heat it adds, and won’t forget it again. Thanks for a new side dish, it goes with just about anything, burgers and even taco night.

Currently making this right now! But I do have a question… My dip is mostly white!… The picture it looks mostly corn. I’ve checked and rechecked ingredients, and I followed exactly. Should it look like a white dip with corn ?
Yes, this is completely normal – the dip is mostly white when submerged in the slow cooker.
Really good! The next day, I put some leftovers in a mug and poured hot chicken bouillon over – cream of chicken soup!
Omgoodness!! This dip is to die for! I used frozen corn but otherwise followed exactly!!! Love, love, love!!!

You can certainly try substituting goat cheese but without further recipe testing, I cannot speak for how much this will change the overall taste/texture of the dish. Using a substitution may also result in a mediocre outcome but if substitutions must be made, please use your best judgment.
Sarah….if you Google it, you’ll find 9-11 substitutions for cream cheese.

Can this be frozen and thawed in a crockpot?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
Can you do it on high to cut the cook time in half or will it burn?
Or how well does it reheat? If I cooked it in the morning and in the evening turned the crock pot on warm or low do you know if it would yield the same results?
Stephanie, I worry that cooking on high heat will cause the dip to burn. As for reheating, it should be fine to keep the dip on the warm setting but it may be best to stir it occasionally.

A Crock-Pot is a large electric pot used for cooking food very slowly. And without further recipe testing, I cannot advise on how to adapt this recipe without a slow cooker. I made this tonight and it was scrumptious! Definitely going into my favorite recipe file!
I like to use frozen corn in lieu of canned corn. To avoid the extra moisture, I would suggest either microwaving the frozen corn and then draining before adding to the recipe or even using a pan on the stove top to saute the the frozen corn until the excess moisture has evaporated.

This was so amazing!! One tip though….it’s much better with regular cream cheese…the low fat changes the flavor. I’ve made it twice first with regular cream cheese and reg sour cream and the second with low fat cream cheese and reg sour cream. The first had more flavor and was by far the best!!

I’ve made this three times now and it has been a huge hit each time! I have to admit that I don’t exactly *measure* the cheese and throw in a little extra! ;o) And I’ve been too lazy to do the bacon, which I’m sure sends it over the top…but it’s seriously so good as is! This can be stored in the fridge for 2-3 days.

I was wondering what size crock pot everyone used. I just bought a new in box 2 qt. (small) at a Goodwill store and I have a regular sized one–oval probably 5-6 qt. size. I would love to use my small one, but don’t know how much this actually yields. Any help in crockpot size would be much appreciated.
Nancy, I recommend using the larger slow cooker. You can also halve the recipe if you would like to use the smaller one.

You can use fresh cooked corn in lieu of canned corn. I do not recommend using frozen corn as it will bring in unwanted liquid to the dish.
Great! This may be a novice question, but can I just grill the corn as if eating it on the cob and then cut if off and throw it in the crock pot? Or cut it off and let it do all its cooking in the crock pot (no grill)?
Yes, go ahead and grill the corn prior to adding to the slow cooker.
How would you modify this if you wanted to make it in a hurry and not in a crock pot? Would you just put everything on the stovetop and mix together? Want to make it tonight, but won’t be home in time to wait several hours for it to be done.
Unfortunately, this is a recipe particularly for the slow cooker. I recommend using your best judgement to convert it to the stove-top method.

This was a hit on our snowy day at work! Since I got to go in late to work, I went ahead and packed up my slow cooker and can opener before heading out. It maybe ten or fifteen minutes to grab the ingredients at a grocery store (I substituted strips of bacon for a bag of bacon bits) and I was on my way. I cut up the jalapeños and cream cheese– threw everything into the crock pot and people were digging in before the two hours was up!! Thank you for such an easy and yummy comfort food!!! 🙂

I made this tonight as a side dish. It was delicious, but needed minor tweaking to adapt it from a dip to actual food, if you get my drift. I had exactly halved every ingredient in the recipe because it was just my husband and me eating and we’re not big leftover people. I ended up adding more corn so the consistency was thicker. I also used green onion instead of chives, and ended up adding maybe three or 4 tablespoons all together. And the bacon in this recipe is wonderful! I will add more next time. We both enjoyed this dish, and it went very well with the fillets. A keeper for sure!

It may be a little too small.
1.5 is too small (ask me how I know lol) If you cut the recipe down by a third it would likely fit. Or do what I do – Mix it in a bowl, transfer what fits comfortably, and then pop the rest in the fridge so you have some left over for yourself once the guests leave
